Peanut Butter Vegetable Chicken Soup
I have to agree with other reviewers, I was skeptical that this recipe would be as good as the reviews suggest. It was a hit at my house! I used the veggies that I had on hand a red pepper, zucchini, leek, broccoli, celery, carrot, onion, and a potato. Instead of the tomatoes I added a heaping Tbs of tomato paste. I also followed the recommendations of other reviews and I sauted the onions, celery, and carrot in a little olive oil before adding the broth. I also added a 1/4 tsp of cayenne and curry powder at the end. The spices really made the dish, it gave it a bit more flavor and complexity.

I made this recipe as my first attempt at guacamole. I used this recipe as a starting point, made a few alterations based on a local restaurant that makes a table-side guac that is to die for. I added a pinch of cumin, used only 2 avocados, added an extra clove of garlic, and used 2 juicy limes. MMMM Good! No matter how you make this recipe it is a winner! Thank you Bob!

Disappearing Marshmallow Brownies
A very delicious and simple blondie. I love to eat chocolates, but chocolate baked good have never been my favorite. I love this twist on brownies! I prepared the recipe as directed, the suggested baking time is definitely not enough. I baked mine for about 23 minutes, it needed about 5 more minutes like another reviewer stated. Also I found them to have a bit of a greasy feel, I am not sure if that would have changed with additional baking time. I will try it again!
