My favorite things to cook
There are alot of great reasons to live in FL. One of them is the abundance of fresh fish. At home, and when we go out to eat, I will order fish 99% of the time in a reastaurant. I also bake alot of chicken tenders and put over a salad.
My cooking triumphs
AS mentiones above, a great summer salad is baby butter lettuce, sliced strawberries, sliced cucs, sliced red onion, with baked chicken on top. I prefer to slice the chicken right out of the oven. An easy and lite way to bake it is with lemon juice, a small pat of "cant believe its not butter LIGHT" and toped off with some Montreal Chicken seasioning! What a great meal. Any kind of lite salad dressing but we really enjoy Kens Steak House Lite Walnut Vineregrette! YUM!

Jamie's Baked Brie
The only tip I took from this recipe was....I did take the rind off the top prior to wrapping the brie. This makes an AMAZING difference! The brie melts soooo much better. I made it w the traditional raspberry jam, but next time I will try this recipe to a tee. Thanks so much for the tip!

Raspberry Walnut Baked Brie
This is such a great recipe. I did split it horizontly, and put in finely sliced apples, chopped walnuts and raspberry jam. (seedless) brushed the outside of the pastry w/ egg white, and.....for a bit of sweetness.........melted about 3 tablespoons of butter and a touch of cinnimon, and burshed that over the egg white!! YUM!! Making it tomorow for Super Bowl Sunday! Go Colts!!

Make-Ahead Hot Buttered Rum Mix
Fantastic!! LOVED the orange in it. Substituted cinnamon for the punpkin spice. Thanks for such a keeper!!
