Marinated Wild Salmon

This was a great recipe! I don't use sugar so I added honey instead and used regular Balsamic Vinegar instead White as I didn't have any. I marinated for about 4 hours and used Wild Salmon, I won't buy Farm Raised. Yummy! Give it a try :)

Artichokes

This is a good start. I put onion, garlic clove and lemon in the water. I don't have a steamer, I just put in a couple of inches of water and set the artichokes stem down in the water, cover and simmer 45 mins. Also, I think artichokes are prettier in their natural state so I don't trim them at all and they just look lovely.

High Temperature Eye-of-Round Roast

This is a fantastic recipe BUT....you DO NOT have to wait 2 1.2 hours to open the door! You will, as many have said, have a cold roast to serve and heating it back up will just overcook it. I open the door when it feels cool, I mean cool is cool so why wait an extra hour. After about an hour, hour and fifteen minutes, it's fine to open and serve :)

Lemon-Lime Crackle Cookies

These cookies are great but the batter/dough is so very sticky and tacky it is difficult to work with. These are such a wonderful change from chocolate chip and peanut butter and all the "usual" cookies. They are light and refreshing and if you are making a cookie basket, they really add a lot of color and lightness to all the other favorites.

The Perfect Cream Cheese Pie Crust

Far from perfect. As other reviewers said, needs much more salt. Also, this just completely falls apart and is impossible to roll out, even with your roller and board well floured! Yes, you can press it into your pie plate BUT that does NOT WORK WELL when you need to put the top piece of your pie on. I hope it tastes better than it was to make. Never again. There are too many easy ones to make with pretty much the same ingredients and that is what I will make from now on.

Maple Apple Crisp

This is delicious, however, I followed other posts and cut butter in half to 1/4 cup. I think next time I will ad two more TBS of butter, still not quite as much as recipe calls for. I added some Craisins and it added a wonderful tartness to help balance the sweet. I did have syrup/juice left in pan but put it over vanilla ice cream...delicious, ties it all together. I also added pumpkin seeds for some added saltiness. I add these to things now instead of nuts sometimes and it's nice addition/change. Very yummy, will make again!

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

I was expecing some heat to this recipe considering it is Cuban and was disappointed. All the heat is in the marinade. Next time, I will cook the chicken in the marinade and also put some chili pepper in the sauce that goes on top. Made as is, it is very bland. As stated by another user, I used coconut milk instead of butter.

Awesome and Easy Creamy Corn Casserole

This was great! I added 2 teaspoons sugar, 1 tablespoon hot pepper relish, 1 tablespoon sweet pepper relish and 1/2 cup mexican cheese blend. Cooked for 35 minutes and took it out to put 1/2 cup more mexican cheese blend on top and then sprinkled a generous amount of French's Fried Onions on top for the last ten minutes. WOW! Everyone wanted the recipe. This is great because you can add just about anything you like to it and it still turns out perfect. :)

Cabbage and Noodles

Great recipe to build on. I added one Granny Smith apple to onion and garlic to brown in pan and also about a TB of brown sugar and some caraway seed. I omitted the butter and just used a bit of bacon fat for saute. YUM

Simple Whole Wheat Bread

I am a first time bread maker. I made two large loaves instead of the three smaller ones. I followed the recipe but did do what one other person did and replace one of the 1/3 Cup honey with molasses and put in about 1/3 cup ground flaxseed. I used the 5 cups of bread flour and all in all, probably added about 3 1/2 cups of whole wheat flour. My loaves are beautiful looking but the bread seems dense to me. When you are kneading the bread, which I did by hand, (I have no machine) it pulled away from the board and did not stick to it and when I divided the dough after the first rise it was very "elastic-ie." I had to twist the two pieces apart to make into loaves. Maybe the bread isn't too dense - I have never made bread before so I am not sure. The taste is wonderful, however, my main concern is the density/texture. OK tried this again and this time loaves came out like bricks. Followed exact recipe. To me, this is NOT a fool proof recipe and I am moving on to another.
