Turkey Veggie Meatloaf Cups

This is a perfect recipe to make on a Sunday to have lunches for a few days - re-heats well in the microwave. I only gave four stars because I made some modifications. I have made this twice so far, the second time being much better. The first time, I put the vegetables in a blender and I think I blended for a little too long. It created a lot of juice that I was tempted to skim off. I used quinoa instead of couscous, because I already had it on hand. Over all, they came out well but a little dry (because I skimmed off that extra juice) and bland. The second time I used the As Seen On TV Salsa maker to chop the veggies separately to avoid pureeing. I also added 3 cloves of fresh hard-neck garlic, a dash of pepper and used the quinoa again. This second batch came out fantastic! I will definitely continue to make these!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

A delicious and economical alternative to butternut squash soup! Followed the recipe as written and it was perfect. (No need to swap oil for butter... butter is better!!)

Luscious Spinach Artichoke Dip

Spinach Quiche

Easy and yummy! BUT there is enough filling to make TWO pies. The first time I made this, I filled the pie crust with the spinach mixure and then had barely any room for the egg portion. The second time, I split the filling into two pies and it was perfect!

Banana Peanut Butter Bread

I switch out the walnuts for mini chocolate chips. Banana, Peanut Butter & Chocolate are an insane combo. I make them as muffins and EVERYBODY loves them!

Love - Ideal for a single girl cooking a tight budget! Perfect to make on a Sunday for football games then re-heat leftovers during the week! The only change I made was to add a can of pinto beans and a bit more tomato sauce.
