Cream Cheese Frosting II

Reviewed: Oct. 5, 2011
Perfect! I didn't change a thing. I like that this recipe is so versatile; it's delicious as is or it can be combined with other flavors for a more unique creation. I'm not usually a frosting fan, but this gets my thumbs up.

Carrot Cake

Reviewed: Oct. 5, 2011
I wanted to surprise my friend with her favorite cake and boy did I do just that! It was a great recipe, but I followed the advice of a couple other chefs here and cut the oil to 1 cup and added 1 tsp of baking powder. Since I like my cake with a little spice, I added an extra tsp of cinnamon and a dash of allspice. I also went with the Cream Cheese Frosting II, but I cut that recipe down significantly since our family doesn't like a lot of frosting; it ended up being light like cinnamon rolls and it was just the right amount. We also used whole wheat flour and organic sugar cane with the cake, and it turned out with just the right texture. Success!

Vegan Split Pea Soup I

Reviewed: Sep. 29, 2011
Sometimes I add about 1-2 Tbs of the dry chicken bouillon to prefect the flavor a bit, but this is one of the only recipes that I will actually follow because it is so good. Thank you!

Black Bean and Salsa Soup

Reviewed: Sep. 29, 2011
I never follow a recipe, but I do get suggestions from them and then tweak them a little. With this one, I cut the recipe in half, used whole black beans, added about 1/2 c of freshly cut cilantro, chicken bouillon instead of vegetable broth, plain yogurt instead of sour cream, and added about 1 tsp of freshly cut jalapenos. I garnished the top with a sprinkle of shredded cheese. VOILA! It turned out so good!

Soft Chocolate Cookies

Reviewed: Sep. 21, 2011
I've never made chocolate cookies before so when my friend requested them I had to find a good recipe. Found it! I only made half of what the recipe required because chocolate is a rich dessert that you don't need a whole lot of and I was right. I tried one and it satisfied my chocolate craving with just that one. I also use whole wheat flour instead of all purpose flour along with natural ingredients so I feel a bit better about the nutritional value of the cookies. I'm going to try to remake this recipe with honey next time and see how that turns out. Thank you for the yummy recipe! :)

Jamie's Minestrone

Reviewed: Mar. 31, 2011
Our family loved it! Even our picky toddler ate the whole bowl! I cut this recipe in half, used chicken bouillon instead of just water, and added some cilantro. AMAZING! Thank you for sharing this recipe! (The wine was a good touch too) :)
