Triple-Cheese Macaroni

Reviewed: Aug. 14, 2009
I made this last night. Since I'm a beginner, I didn't change anything. I baked it until the cheese started to brown and it was absolutely deliscious. My wife gave it an A+.

Taco Salad with Ranch Dressing

Reviewed: Sep. 1, 2009
I fried 1" thick chicken breasts on medium/low heat seasoned with salt, pepper and a garlic and herb rub. They were juicy and had a great flavor. I made the salad according to the recipe, but it just didn't taste that good. It needed more flavors.

I like bleu cheese and I like potato salad. This is the best potato salad I have ever had.

Baked Garlic Parmesan Chicken

Reviewed: Sep. 10, 2009
This is a good recipe for boneless chicken breasts. I added Italian dressing to the wet mix, and as others suggested, I seasoned with Mrs Dash and topped with shredded mozzarella. The chicken was juicy and flavorful.

Rempel Family Meatloaf

Reviewed: Sep. 22, 2009
I am a meat loaf lover and my wife has been making great meat loaf for 30 years. This is the first one I made and I think it is better than hers. If you tell her that I will deny it. I took the advice of other reviewers and was generous on the amount of crackers, and used almost a cup. I mixed Ritz together with Cheeze-its. After baking 30 minutes I topped with the glaze Paula Deen uses - 1/3 cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon brown mustard (Guldens). It was delicious. I'm glad I found this recipe.

Speedy Salmon Patties

Reviewed: Sep. 22, 2009
I've made these several times. They taste great and are easy to make. Make sure you use salmon fillets( two 7 oz cans) rather than a can of whole salmon which includes bones and skin.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Reviewed: Sep. 22, 2009
This is a very flavorful recipe, but I overcooked the chops. Also I used spaghetti instead of toothpicks, as was suggested, but that didn't work out. The spaghetti cooked and then I lost a lot of the stuffing out of the pocket. Maybe my chops were too thick for that.

Cincinnati Chili I

Reviewed: Sep. 24, 2009
I am a Cincinnati native now living in Texas. I ate Skyline for over 40 years and I can tell you this recipe is very, very close. I did not put the onion in but used 1/2 tsp onion powder. The only thing I will change next time will be to cut back a little on the vinegar. I browned the beef separatly, drained the grease and added to the heating broth mixture. Brought it all to a boil, reduced heat, covered, and simmered for 1-1/2 hours. Then I used a stick blender as was previously suggested. The consistency was dead on. I let simmer for another 1/2 hour and refrigerated overnight. Next day I reheated slowly and let simmer for 30 minutes and servied piping hot over spaghetti and topped with grated cheddar. The next night I made cheese coneys with the leftovers. Both were delicious. This will definelty help when I need a Skyline "fix". Now, if someone could provide a La Rosa's spaghetti sauce recipe...

Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 6, 2009
The sauce was outstanding and had a good (thick) consistency. I wasn't in a hurry so I let it cook an extra 30-40 minutes before I added the meatballs. I added oregano, garlic powder and 1/4 cup of milk to the meatball mixture. The meatballs cooked well in the sauce. They tasted great but were just a little dry so next time I will try oats instead of breadcrumbs and/or add an extra egg to moisten. I will definitely make this regularly.

Savory Chicken Breasts

Reviewed: Oct. 6, 2009
The only changes I made were to add a thin slice of ham over each breast, as was previously suggested, and coated with EVOO, salt, pepper, and Italian seasoning. The chicken breasts were tender and juicy. The sauce was pretty good but for me tasted too much like the soup. It needs a little punching up.

Bleu Cheese Coleslaw

Reviewed: Oct. 7, 2009
This is a very tasty slaw but you really need to like bleu cheese to enjoy it. I followed the recipe as written but went a little heavy on the cheese since I really like it. I don't think the sour cream adds much to the flavor, in fact I think it reduces the tang of the bleu cheese. Next time I will cut back or eliminate that ingredient.

Flatlander Chili

Reviewed: Oct. 7, 2009
This is a great tasting chili con carne and terrific meal for football weather. I took the advice of others and used a base of 28 oz diced tomatoes, 29 oz tomato sauce, and a 10 oz can of tomato soup. I topped it with shredded cheddar and oyster crackers and served with a side of cole slaw. I would prefer it a little thicker so next time I will remove the cover for 30 minutes or so while simmering.

Pizza Casserole

Reviewed: Oct. 13, 2009
I thought this was a very good family dish. Although it wasn't spectacular it is economical and has a good pizza flavor. I omitted the onion but added mushrooms, extra cheese and pepperoni (as I would on a pizza - just my personal preference). I cooked the ground beef and noodles, and then assembled everything but milk and chesse in advance so I could just bake when desired later that day. I mixed the milk just before putting in the oven and added the cheese per the recipe. That worked out well.

Roasted Pork Tenderloin

Reviewed: Oct. 16, 2009
I followed the recipe as written. It was very good but because of all the brown sugar, it tasted quite a bit different than traditional sauerkraut. There is almost none of the kraut "bite". As long as you know that going in you won't be surprised or disappointed. I will keep looking for more traditional recipes with sauerkraut.

Yummy Pork Chops

Reviewed: Nov. 5, 2009
The flavor just was not that good. I realize that I probably should have marinated the chops overnight, which would have enhanced the flavor (if you have the time). But I am rating this recipe AS WRITTEN, as opposed to the many variations reviewed. I thought it was kind of a waste of the Italian dressing and soy sauce.

Best Tuna Casserole

Reviewed: Nov. 18, 2009
I baked this at 375 until the cheese was bubbling (about 30 minutes). This was tasty but mine turned out a liitle dry even though I added 1/4 cup milk and 1/4 cup sour cream. I added a little more milk at the end and that helped. Next time I think I will make it with less noodles and see if that helps.
