My grandmother has a recipe for molasses cookies which she bakes every Christmas. Someday I hope mine are as good as hers!

Cheesy Chicken and Salsa Skillet
I was totally skeptical of this dish when I started making it. I had no idea how pasta and salsa were meant to go together, BUT THEY ARE. This was surprisingly delicious! I used two peppers, one red and one green, and I think I used a little more salsa than called for, but those were the only changes I made to the recipe. I did find that I needed to simmer it just a little longer than called for (I let it go for about 15 minutes), but this could just be due to the size of the chunks of pepper and chicken I was cooking. And do not forget the cheese, it really makes the dish!! Can't wait to make this again!

Stuffed Green Peppers I
We really enjoyed this dish! It was very easy, just boil and brown meat, and then add everything together, pretty foolproof! I also used beef broth instead of water, and I did use Minute rice, which I think would solve others' problem of the rice not being done, because mine was perfect. The peppers were done perfectly, still firm and not soggy, even after baking. Great recipe!

Yummy Honey Chicken Kabobs
This was so simple and yet so great! I made the recipe almost exactly as written, just switched around the veggies a bit. I marinated for a good six hours to really let the flavor develop, and it was rich and flavorful! The veggies do get done before the chicken, so I recommend putting veggies and meat on separate skewers, as others have done, that way if the meat needs longer to cook, the veggies don't get overdone. Can't wait to make again!
