Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

I made recipe as is, only adding vanilla to the box mix. But I do that to all boxed mixes. I love cream cheese frosting and it was really good with the extra kick of spices. My family and friends loved them little change in cupcake flavor. Will definitely make again. Nice cupcake with very little effort.

Strawberry Cake from Scratch

I found this cake delicious. I bake a LOT of cakes and i followed the recipe exactly. It follows the script of a basic scratch recips. One thing you MUST do is cream your butter and sugar well. At least 2 minutes to beat air into the batter. This is essential for not having a heavy cake. I used fresh strawberries, put a little sugar on them and let then juice up over night. I did not get the the weird artificial taste others were talking about with the jello. I asked everybody that tasted it it they could taste a jello taste. I did add a little red food coloring but just enought to brighten not really color. All and all the cake was flavorful, very light and one that I will be making again.

Seven Layer Taco Dip

This was very good, I some what made some changes however. I left out the Cream Cheese and Green Pepper all together as Green Peppers have a tendency to overwhelm certain recipes. Otherwise it was the same. This is great for work snack day.

Jamaica Cake

This recipe is very good. We put plenty of pecans in it. But make sure the middle is done as this is a thick recipe. Also the top may have a tendency to brown fast before the cake is done so be sure to tent some foil on top to prevent excessive browning. Then enjoy. Warm with coffee or milk it's great.

Bananas Foster Chimichangas

These were a hit at the office Friday Feast. I made them for breakfast. Since I wanted them for the morning I made the filling and let it cool. This made it easier to handle and to wrap and I did not have any leaking from my amateur wrapping. I wrapped them the night before which gave the tortillas time to set. They fry up very fast and crispy yummy. I sprinkled them with a but of sugar and cinnamon but they were excellent without any type of topping unless you prepare them for dessert in which Ice Cream would be best. I will definately be making this again.

Beef Enchiladas I

This was a very good recipe. First of all I thought 2 cans of chiles were too much used 1-1/2 as they did not seem to add any heat to the recipe. Instead of the tomato sauce, I used jar of Enchilada sauce and 1-cup of Salsa. Instead of Cheddar cheese I used Mexican cheese and 6" flour tortillas. I let one of my friends from Mexico taste them and he thought they were good but stated Enchiladas should be spicier and suggested adding jalapena peppers.

Creamy Caramel Flan

For a 1st time Flan maker the outcome was great. I improvised a bit by adding an egg and taking the sugar up to 1 cup. Patience is a must when melting sugar. You want to be careful not to let it burn. I also added just a touch more vanilla. We loved the rich creamy taste and texture.

Broccoli Bites

This was a very good recipe for the experienced cook. You do have to work with the batter to get it just right. Cutting back on the liquid, adding more cheese. But once you have it it is great. It is worth the effort for a different appetizer. Don't cook too long and have you oil hot hot hot. Best if eaten immediately. Leftovers tend to be greasy.

Coconut Shrimp I

This recipe is awesome. My daughter makes it for special occasions, we hate cleaning shrimp but this is worth it. We could not find any unsweetened coconut, so I just made the dipping sauce a bit more spicy by adding more horseradish. It was terrific. I concur with everyone elso, RESTAURANT QUALITY !!!
