Zucchini Brownies

Very good! My family ate the whole pan! I didn't use the icing part of this recipe, mostly because I was being lazy...I just melted chocolate chips on top once it came out of the oven and my family loved it that way.

Sarge's EZ Pulled Pork BBQ

Delicious! I made this when we went camping (I know, not really "roughing it" with a crock pot in the trailer!) and everyone loved it! I didn't use any coffee, just beef broth. About an hour before we were ready to eat, I shredded the pork (which was a cheaper cut than suggested), removed most of the beef broth, and then added in Bullseye BBQ sauce. I added a bit of the broth back in afterwards to maintain the consistency/moisture I was looking for. Then just let it cook on low until we were ready to eat!

Zucchini Cookies

Very yummy! I was a bit skeptical, but I had tons of zucchini in my garden this year, so I tried them anyway and they were delicious! I didn't have ground cloves so used nutmeg instead and I made half with raisins and the other half with chocolate chips.

Turkey and Quinoa Meatloaf

Yum!!! I've been wanting to try this one for awhile, but my husband isn't a fan of quinoa, so I hadn't until now. I made it and waited until he tried it and liked it before telling him what was in it! He had no complaints! I didn't have tomato paste, so used ketchup and we don't like spicy, so I used BBQ sauce instead of hot sauce, as suggested by another reviewer. I also added about a cup of shredded marble cheese, also as suggested by another! Will definitely make this again!

Baked Zucchini Chips

Loved this! I added garlic salt as well as garlic and onion powder, to the breading and I used panko instead of bread crumbs. Baked at 450 for 7 minutes on each side, spraying with Pam before baking too.

Award Winning Soft Chocolate Chip Cookies

I don't eat sweets much but my husband and kids loved these and gobbled them up! I took them out of the oven when they appeared almost done and they were perfect as they seemed to continue to cook a bit after coming out and would have been hard if I left them much longer!

Kay's Spaghetti and Lasagna Sauce

My family loves this spaghetti sauce! I followed other reviewers and always puree in cooked carrots with the tomatoes. I also simmer the sauce with a potatoe cut into quarters and it does wonders in removing the acidity! Very easy to increase recipe size and freeze sauce for quick weekday meals!

Teriyaki Pork Tenderloin

This turned out fantastic! I was a little nervous about how it would turn out because the marinade itself didn't taste very good (I was trying to taste-test it to be sure it was sweet enough before adding the pork). I trusted all of the good reviews though and let it go and it tasted great! I followed as directed, except that I used a bit more brown sugar. I did follow other reviewers' advice and made extra marinade and boiled it with chicken broth and cornstarch to make a sauce.

Almond Buttercrunch Candy I

This received rave reviews from everyone who tried it. It wasn't easy though, my candy thermometer isn't very good, so I tested using cold water. I got trigger happy with my first batch and removed it too soon, so it never hardened and ended up like really sweet fudge. Second try I forced myself to let it go a bit longer and it turned out perfectly. I, like others, didn't put a layer of chocolate on the bottom, and instead of milk chocolate, I broke up pieces of Hershey's Special Dark chocolate bars (2).

Twice-Baked Mashed Potatoes

OMG, soooo good! I love stuffed baked potatoes and this tastes exactly like them without having to maintain the potato skin! The only thing I changed with the recipe was I omitted green peppers as my husband doesn't care for them and I used green onions (no need to fry) instead of regular onion.

Sesame Snaps

These are delish! They taste a lot like the caramel corn that I make at Christmas, but with the added flavour of toasted sesame seeds. Followed the recipe to a tee, baked for 9 minutes and they turned out great!

Portobello Penne Pasta Casserole

This was super-tasty! My hubby doesn't like spinach, but did enjoy this. We tried using havarti slices for melting on top and it was good as well. The spinach was a bit strong though, so I gave it a 4 rather than a 5.

Pumpkin Cookies V

I just made these this morning with my 3-year old and they turned out great! It was hard to get him to stop eating them, especially once they were iced! I added a bit more icing sugar than called for and dipped the cookies into the icing and placed them on parchment paper. Time will tell how long these 90-some cookies last us!

Best Ever Cheese Bread

This is a very rich cheese bread! I followed others advice and used half the mayo and was glad I did! I only had marble cheese, but it was great. Also used bread because I didn't have a loaf but it was a bit soggy so would imagine would be perfect on a french loaf.

Garbanzo Stir-Fry

This turned out great! My son and I loved it. The oregano was a little too much flavor for my husband, but he tends to be a plain meat and potato man! I added onion and increased the garlic by a clove or so. I also tried melting cheese on it as previous reviews mentioned and it was great both with and without it!

Marshmallow Fondant

I'm a rookie working with fondant, but my first attempt at this recipe was a success! I followed previous recommendations to mix color into melted marshmallows as well as use my KA mixer to do all the hard/dirty work! I only had to do minimal hand kneading to finish it off at the end! Tastes much better than the store-bought stuff I have! Love it!

Sweet and Sour Meatballs II

This makes a very yummy sweet and sour sauce, my husband and 3 year-old son loved it! I used regular vinegar since that's all I had and did add a bit more soy sauce as it is very sweet. I already had meatballs in the freezer that I had made previously, so didn't use that oart of this recipe.

Chinese Chicken Fried Rice II

I was a little leery since the recipe is so simple with relatively few ingredients, but my family loved it! I didn't add as much pepper as it calls for, and added frozen peas and corn and a bit of ground ginger as well and just a little more soy sauce. Very good for a quick meal to use up leftovers!
