This was so moist! Followed the recipe almost to the end but could not help my self and made some changes! After shredding the Zucchini I like to put it in a bowl with some salt( about 1 tsp) and let it sit for 15 min. There is allot of water in Zucchini and Salt renders most of the extra water out. You can do that with cucumbers too! Then rinse the shredded zucchini under running water and squeeze the extra water out as much as possible! I take fresh blueberries and freeze it befor adding to the dough, that way they stay whole and don't get mushy when stired with havy dough! I cooked it about 30 minutes longer then suggested in this recipe! Great the next day with cream cheese! Enjoy!
