Hash Brown Casserole II

This was amazing. They don't sell hash browns where I live (overseas), so I broke out my food processor and made my own. I used the grater blade and grated about 2 lbs of potatoes. I put the grated potatoes into a pot of water and washed them well, drained them and washed them again. This is a really important step, or else the starch will make your potatoes grey. Because I already had the grater out, I grated the onion too. Then I grated the cheese too! (Love this food processor!) I didn't add butter (because I forgot). I definitely think this needs the full tsp of salt. I cut it back and missed it. I did add a can of diced chilies which was an excellent addition. I think I could even go as hot as jalapenño peppers or maybe use Pepper Jack cheese instead of cheddar. I didn't do the topping, but like another reviewer's suggestion of the french onions for the last few minutes of baking.

Bread Pudding with Whiskey Sauce III

This was delicious! My kids don't like raisins, so I peeled three apples and finely diced them and tossed them with the bread. For bread, I used leftover hamburger and hot dog buns. Milk is super expensive where I live, so I used powdered milk instead. It did have to cook longer than the recipe stated and I used eight eggs instead of six. I thought the whiskey sauce was great. I saved the rest for ice cream. Yummy!

Tilapia Ceviche

DO NOT COOK THE FISH! Ceviche is raw seafood cooked by the acid of the citrus. If you precook it, you lose the texture and everything. You only need an hour to acid cook the fish. It is obvious that the texture changes from raw meat to not raw. This is not sashimi. I added a jalapeño too. We ate it with tortilla chips. Yummy!

Health Nut Blueberry Muffins

These were great! I didn't have oat bran, so I used flax instead. I also used frozen berries, so I put a little more oats in. I think I would use at least 1/2 brown sugar next time and some cinnamon for a little more depth of flavor. They don't sell buttermilk here in Puerto Rico, so I mixed 2 Tablespoons of vinegar in with my milk. I also used large eggs. This is a great way to use up bananas too!

Oatmeal Scotchies Cookies

These were great after modifications, but as directed, they were a three. I made one batch as called for, but they fell apart. I added an egg to the next batch and used white chocolate chips. I also changed the cinnamon to 1 Tblsp. They held together much better and resulted in a tender cookie with a crunchy outer crust. Yummy. With modifications, a four plus.

White Frosting

Best frosting ever! Do you like the yummy whipped icing on Costco cakes, but don't want the expense if buying whipping cream? You'll love this recipe. I make it just as directed and it is my most clamor end after frosting. My favorite is on chocolate cupcakes. This is not an overly sweet frosting. It is quite light and fluffy. Do not substitute the sugar. It is not grainy if you beat for the 10 min required. I can't understand a single bad review. This is delicious! Oh, I do cool my flour/milk in the fridge until my cupcakes or cake is completely cooled. That way, the butter doesn't melt. You want the butter to be just room temp.

Baked Pork Chops I

My family loved this. I followed the recipe as stated except we only had red wine. I also don't like cream of mushroom, so we used cream of chicken. It could have been a little more strongly spiced, but we served it over rice with a salad and it was great. I thought the gravy was sufficient. There was no need to double it.

Creamy Fruit Mold

YUMMY! I don't like Lime Jello, so I used Strawberry. I also doubled this and put it in a 13x9 glass dish. I didn't have any fruit cocktail, so I used crushed pineapple. I guess I did a lot of substitutions, but it is essentially the same recipe. I'll continue to make this. We served it with ribs and potato salad.

Empire State Muffins

I was out of carrots, so I grated another apple. I used granny smiths. I also subbed a cup and a half of whole wheat flour for the same amount of all purpose flour. These were amazing! I also didn't chop the cranberries because they were frozen. They added a lot of tartness surrounded by the sweetness of the muffin. I thought these were great and they were packed with fiber too! I don't know if I'll ever add the carrot because they were so good without!

Amazing Pecan Coffee Cake

The cake was pretty dense for my tastes. The flavor was outstanding. I upped the cinnamon in the topping to 1 Tbls. Everyone gobbled it up though!

Creamy Potato and Leek Soup

I used about 10 potatoes and a box and a half of chicken stock (52 oz?) I boiled the potatoes in the stock for about 20-25 minutes. I added the leeks after sautéing them in butter. Then I took the whole lot and used my blender (this is a great place for an immersion blender, but my mom didn't have one.) Then, I added the cream and a little salt and pepper. The kids LOVED it! My 10 yr old said it tasted like the restaurant (Sweet Tomatoes), so that's high praise.

German Chocolate Cake Frosting II

This does NOT need cornstarch. Just turn up the heat a bit. I brought it up to 212 degrees measured by the candy thermometer and kept it there for about two minutes CONSTANTLY stirring. I did 1 1/2 times this recipe and iced a three layer cake beautifully. I did toast the coconut in a dry pan for a few minutes before I started everything else. It looks and tastes amazing!

Lisa's Chocolate Chocolate Chip Cake

I have made this about six times now. My family DEVOURS it. At Christmas I made it with mint chips and that was delicious too. I don't add any frosting or glaze to it. This is the moistest, fudgiest cake. My family calls it the molten lava cake. Five thumbs up!

Cranberry Sauce Chicken II

I skinned the thighs first, and used 1000 island instead of Russian dressing. (I didn't have any). It was still delicious! I cooked it 20 minutes with a foil tent and then 40 minutes without. We had lots of juicy sauce to pour over our rice. I made a salad and voila! Dinner!

Molasses Sugar Cookies

These were great. I didn't melt the shortening though. I just creamed sugar and shortning and then added my eggs and molasses. Then all of dry ingredients went into the bowl. I just rolled them right then without refrigeration and it was just fine. They crinkled just like they were supposed to. I made my own colored sugar by mixing 5 drops of food coloring into about 1/2 cup white sugar. Much cheaper than buying that stuff at the store and they looked great. This recipe only made 5 dozen cookies for me and they weren't super huge or anything. A keeper for sure!

Chocolate Chip Pumpkin Bread

This is amazing. I have already made it three times. I made loaves to give away, but my family gobbled them up before they were even cool. DELICIOUS! I don't use mini-choc chips. I just used two small bags and about a cup of walnuts. Wonderful and this will be a holiday staple for our family.

Curry Beef Soup

This is now my favorite soup ever! I make fresh French bread to dip in it and it is AMAZING! I cook it for about an hour and then add potatoes and carrots for the last 30 minutes. Absolutly a keeper!
