I am a teacher, but my husband was recently transferred to Puerto Rico from Seattle and I haven't found a job yet. So, I am taking this time to really become a GOOD cook. We save so much money and who knew that I could really create food better than restaurants where we have wasted 1000s of dollars. Allrecipes even made it into my Christmas letter this year!
My favorite things to cook
I have recently started baking breads, which I am enjoying. We can't get Thai or Indian food here, so I have also been perfecting my curries. My favorite things are recipes rated 4.5 stars and above by all of you wonderful cooks. Thank you so much for all of your comments. They really make the recipes.
My favorite family cooking traditions
I love the holidays and making appetizers specifically. It is fun to make everything ahead and really be able to enjoy the party. My mom wasn't really a cook, so I have come into this as an adult. I do cherish my grandma's cookbook, however. You feel her really near when cooking her recipes.
My cooking triumphs
I made tender, delicious dinner rolls, Julia Child's Beouf Bourguignon, and have mastered the omelet.
My cooking tragedies
When I didn't realize my yeast was bad. (YUCKY HOCKEY PUCK LOAVES), When I tried making fudge with salt instead of sugar (at my mother-in-law's). I couldn't understand why the sugar wouldn't dissolve! Who has a 5 lb container of salt, anyway??

Hash Brown Casserole II
This was amazing. They don't sell hash browns where I live (overseas), so I broke out my food processor and made my own. I used the grater blade and grated about 2 lbs of potatoes. I put the grated potatoes into a pot of water and washed them well, drained them and washed them again. This is a really important step, or else the starch will make your potatoes grey. Because I already had the grater out, I grated the onion too. Then I grated the cheese too! (Love this food processor!) I didn't add butter (because I forgot). I definitely think this needs the full tsp of salt. I cut it back and missed it. I did add a can of diced chilies which was an excellent addition. I think I could even go as hot as jalapenño peppers or maybe use Pepper Jack cheese instead of cheddar. I didn't do the topping, but like another reviewer's suggestion of the french onions for the last few minutes of baking.
