Orange Sponge Cake

I doubled this recipe to make a two tier cake. It made one 10" and one 7" cakes. The cakes came out nice and spongy, BUT I had to add more orange juice to the batter to make it workable. First I added as much orange juice as the recipe calls for. The batter came out as a stiff dough to which much of the flour could not be incorporated. So I added more orange juice, and then even more orange juice. I think I used 4 times more orange juice than what the recipe calls for. That's why I am giving this 4 stars. Everything else was perfect. I used rind of two large oranges but next time I will double this. This cake is much better than the pound cake that I used to make before. It is lighter and nicer for layered cakes. I cut both cakes into layers and filled them with whipped cream, chopped bananas, chopped pineapples and chopped walnuts. The guests loved the cake and everyone asked for more. So from now on I will use this recipe in the place of the pound cakes or simple vanilla flavoured sponge cakes.

Cranberry Sauce

A perfect recipe. I only used 1/2 cup of sugar. It came out a bit on the sour side which is perfect for my taste. But if you have sweet teeth, add all the sugar that the recipe calls for. So quick and easy to make. I'll make this any time that I find fresh cranberries in the supermarket.

Rolled Fondant

I wish I could give this 10 stars. I had never made a fondant before. I made this yesterday for a baby shower cake and wow! It was easy to make and rolled out so easy that I couldn't believe. It was so pliable and soft that couldn't believe. Everyone at the party told me that I was a pro and that I should open a bakery. The fondant didn't crack or tear at all. I used pineapple juice instead of vanilla for the flavor because I don't like vanilla. Awesome. I don't know how to thank you for this recipe. I will post the pictures of the cake here. Some tips: I greased the rolling surface with shortening and dusted it with icing sugar. As I was kneading the fondant, coloring it or playing with it, I kept greasing my hand with shortening. When the fondant was too stiff, I soaked my hands in water and it worked well. I think you should have a bowl of icing sugar, 2-3 spoonfuls of shortening and some water by your hand as you are working with this fondant.

Chocolate Cakes with Liquid Centers

Absolutely amazing. I used semi sweet chocolate. Tasted great. I used a muffin tin and the recipe made 5 muffin size lava cakes. I buttered the tin very well and dusted it with flour and the cakes unmolded very easily. I think it's better to put the tin on the upper shelf of the oven. This way, the liquid part will be in the center of the cake. If you put it on the middle shelf, the liquid part will be on top of the cakes. I served it with vanilla ice-cream, strawberries and whipped cream for Valentine's dessert and both of us enjoyed it so much. Thanks a lot for posting this amazing recipe.

Pomegranate Stew with Chicken (Khoresh Fesenjan)

If will become much darker and more flavorful if you use one cup of pomegranate paste instead of the pomegranate juice. I usually make this with meatballs instead of chicken. I make the meatballs in advance and add them to the stew when the walnuts leave their oil. Some people had complained that it is greasy. Yes it is, but all the oil comes out of the walnuts, you don't add any oil to the stew. We never remove the walnut oil from this stew. It tastes really good.

Simple White Cake

I made this cake for my friend's birthday and WOW! This is awesome. I made a large 9"x13", two layered cake. If you want a 9"x13" layered cake, double the amount of the recipe and then divide the batter between three 9"x13" pans. This way your layers will have the best thickness (my layers were too thick, I will make a 3 layer cake next time). For the frosting I whipped two cups of heavy whipping cream with 3/4 cup of confectioner sugar and 4 tbsp of cocoa liquor to my desired consistency. For the filling I peeled and chopped 10 small apples and boiled them with 1/2 cup of water and 2tbsp of sugar until it was soft and jam like. I added a zest of one lemon into this jam, coated the layers with the frosting and filled them with this filling. And for the cake, I substituted vanilla with the zest of one medium orange. I received so many wows in the party and everyone loved the cake. It took a lot of time but it is definitely worth it. Oh and two more things: add 1/4 cup more milk as other users suggested and beat every step very well. Thanks for posting this recipes SCOTTOSMAN.

Apple Brownies

I followed the recipe as it is. Only substituted the walnuts with raisins because I didn't have walnuts. It's so moist and nice. A little bit sweet for me, but my friends loved it. Thanks a lot for posting this. I will make it again with less sugar.

Apple Breakfast Bread

This is a very good recipe. I used a cup of applesauce instead of the oil. My bread came out too dry. So I guess that some oil is needed. I'll use some oil plus apple sauce next time. I also used only half a cup of brown sugar and it was not a good idea. It lacks sweetness now. So use the recipe's amount. I will make this again with more sugar and some oil or butter. Thanks a lot for posting.

Moist Date Nut Bread

Perfect recipe. It's a keeper. The loaf came out so moist and nice. The only changes that I made were adding a cup of raisins and reducing the sugar to 1/4 cup. mmmm. Thanks a lot for posting this.

Sarah's Applesauce

It's really easy and yummy. Thanks for posting. I changed it a little bit and it was still really good. Instead of sugar, I used 2 tablespoons of honey and I used more cinnamon which gave it a brownish color. I added 1 tablespoon of lemon zest to it from the beginning. I also mashed the apples as they were being cooked. I brushed inside of hot sandwich buns with butter and filled them with this apple sauce (warm) and took them for my breakfast which were really tasty and fresh. I also baked it for 20 minutes in a tart shell and it turned out really great.

Cream Cheese Tart Shells

I made these last night and they tasted great. They are really easy to make. I used a normal muffin pan and made 12 tart bases. Baked them for 20 minutes, removed them from the muffin cups, put them on a normal baking pan and topped them with "apple-lemon zest" sauce and baked them for another 20 minutes. They tasted great. I wonder what will happen if I reduce the butter. They are a bit greasy, but taste great. I didn't have normal butter and used salted butter and they still tasted perfect. One tip: mixing the flour with softened butter and cream cheese was a bit hard. I boiled water in a sauce pan, put my mixing bowl on top of the sauce pan so that hot steam would warm up my bowl a bit, and mixed the ingredients very easily. Thanks for posting this recipe. I will make it over and over again.

Easy Granola Bars

I altered this recipe by replacing the chocolate chips with a finely chopped apple. It turned out very soggy. I was hoping for something crunchy. I think the baking time in this recipe is not enough. Next time I will use liquid honey instead of the sweetened condensed milk.
