Spanish-Style Chicken and Sausage

Reviewed: Aug. 19, 2009
Very tasty! I made a few modifications....Instead of frozen peas I used frozen mixed veggies. Also, I changed the amount of veggies to 1 1/2 cups. Last, I used Spicy Italian Turkey Sausage. The spicy sausage really gave the dish some extra flavor and zing! Will definitely make again!

Veggie Potato Salad for a Crowd

Great for something different! Next time I might add some corn and less oil - probably cut the amount in half.

Mom's Lasagna

Great! I added some zucchini, squash, and mushroom as well. I also used the no-boil noodles so I had to increase the baking time to 1 hour.

Linda's Beef Marinade

Reviewed: Sep. 8, 2009
I marindaded the meat for 10 hours....not bad, but could have used a little more wine. I also used Dijon mustard since I didn't have any spice brown which made a good substitute.

Curried Chicken and Brown Rice Casserole

Reviewed: Sep. 24, 2009
Added mushrooms and frozen broccoli. Only added 2 t curry and may only add 1 1/2 next time. 3 is way too much! My husband said it tasted even better the next day leftover because the flavors had time to meld. Definitely will make again!

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Oct. 25, 2009
Awesome! My husband doesn't often demand I make something again, but this one made the list. I didn't make any changes except adding a little corn. I may add some Frank's hot sauce or cayenne next time to give it a little more kick!

Autumn Pork Roast

One of my top 5 favorites! This was the first time I ever cooked with butternut squash. I added apples to the squash which really added a lot of great flavor. Next time I will add some dried cranberries too. Pork was nice and moist.

Apple Squares

Reviewed: Jan. 19, 2010
Instead of all white flour, I added about 1/3 cup of a mixture of wheat bran and wheat germ. Also, I reduced the sugar to about 1/4 c. brown and 1/3 c. white. Still very sweet and tasted great! I may even try reducing the sugar a little more next time and adding applesauce to replace some of the butter.

Grilled Spiced Chicken with Caribbean Citrus-Mango Sauce

Reviewed: Apr. 14, 2010
Decent - used 3 chicken breasts instead of 4 and had just enough sauce. next time I would definitely let the chicken marinate in the spices longer. Cubed and skewered before grilling which worked VERY well!
