Grilled Pork Chops with Fresh Nectarine Salsa

I felt like Goldilocks and the three bears with this recipe. I made the salsa as per the recipe, but ... my stepson thought it was too sweet, my stepdaughter thought it was too spicy...and no one thought it was just right.

Slow Cooker Thai Pork with Rice

I *LOVE* this recipe. It's my favorite way to cook pork in the crock pot. Sometimes we add pineapple chunks or sliced carrots for an added level of flavor. It's delicious!

Alaska Salmon Bake with Pecan Crunch Coating

This was absolutely delicious! My boyfriend, who doesn't eat fish, actually ate two pieces! My only substitution was to use dried dill in place of the parsley, which I forgot to buy. Served it with Couscous and fresh green beans. I will definitely make this again!

Pork Chops with Raspberry Sauce

This was delicious. I brushed the pork with a little raspberry jam/OJ mixed together before rubbing in the spices, grilled it instead of cooking it on the stove, and basted them a few more times with the jam/OJ during cooking and they came out perfect. The sauce was very nice and complimented the pork well.

Vegetarian Bean Curry

This was delicious. I doubled the recipe, and substituted a can of coconut milk for the second can of crushed tomatoes. Served with pita bread, it was a big hit for the vegetarians and non-vegetarians at my halloween party!

Turkey in a Bag

I always cook my turkey in a bag. I also stuff the cavity with lemon (cut in half), garlic (whole, peeled) and fresh rosemary. It's to die for!

Shrimp Scampi Bake

This was delicious. I poured the sauce over some tilapia that I had cooked separately for my shrimp-hating boyfriend (who hates shrimp??!) and baked it and the shrimp in the oven with a bit of panko breadcrumbs on the top. Served over rice with broccoli on the side. I will definitely make this again.

Fruit Cobbler

This was really, really good! I used canned peaches, pineapple, and some fresh strawberries I wanted to use up before they went bad. Topped with an oatmeal/brown sugar crumble topping and served warm with cool whip, it was a hit at tonight's dinner!

No Sour Cream Beef Stroganoff

This was very tasty! I used what I had on hand, so used french onion soup (canned) instead of beef broth, fresh mushrooms, and steak cut into strips instead of ground beef. Didn't have any Worcestershire sauce either, so added a dash of A1. The pans are empty (barely enough for my lunch for tomorrow!), so looks like it's a keeper at my house!

Slow-Cooker Corned Beef and Cabbage

This turned out great! I used baby carrots instead of cutting up whole carrots. So Yummy! I was afraid there would be a lot of leftovers, but there's just enough for my lunch tomorrow (Lucky me!!!)

Slow Cooker Sausage with Sauce

I make Italian sausage like this all the time and the family LOVES it. I put the peppers and onions on the bottom of the crock pot, put frozen Italian sausage on top, then pour sauce over everything. The sausage comes out so tender every time! And I love that I don't need to thaw out the sausage first!

Baked Pineapple

I was looking for something with pineapple that was also Gluten Free. This was amazing. The entire family loved it. I'm glad I doubled the recipe ... well, doubled everything but the sugar. I followed some of the suggestions in the reviews and halved the sugar and used the juice from the crushed pineapple instead of water. This was a great addition to our Easter ham, and I've already gotten requests to make it again!

Easy and Comforting Chicken Rice Casserole

This was okay, but little bland. It needed a bit more seasoning so I added some black pepper, onion and garlic powders. I will try this again, but might tweak it more to kick it up a bit.
