Stir Fried Sesame Vegetables with Rice

Great sauce! I added chicken breast chunks, fresh green beans, and fresh cherry tomatoes and cooked a few more minutes than called for as I prefer my stir fry veggies cooked fairly thoroughly. I used brown 'minute' rice. My boyfriend said this was probably the best stir fry he's ever had. This is a keeper and next time I will try broccoli as well.

Bourbon Chicken

This is a great recipe with fabulous flavor. Made it in the crock pot with just a couple modifications. I substituted 1/4 cup vanilla extract + 1/4 cup water for the bourbon, increased the brown sugar to 3/4 cup based on other reviews, and used 4 tsp of minced garlic (not dried). I did not marinate, just cooked in crock pot for 4 hours on high and turned out delicious. Served on top of brown rice. We are adding this to our list of regular favorites! The sauce was thin, so I am thinking it would turn out fine without adding the extra water, and will probably try that next time.

Bean Potato Enchiladas

This is one of our new favorites! Like other reviewers, I left out the milk and oil and didn't mash the potatoes. I slightly mashed some of the beans. Also, I used Bush's chili beans and didn't drain them. I left the cheese out of the inside and just sprinkled on top before baking. This was fabulous!

Streusel Topped Blueberry Muffins

Great recipe. I made minor changes to make them healthier and they turned out amazing. I used 11/4 white flour and 3/4 wheat flour, 1/4 cup butter and 1/4 cup applesauce, and slightly less butter in the topping. Also added the lemon juice from a lemon.

Morning Glory Muffins I

This is one of my favorite muffin/bread recipes! They are very moist and tasty. This recipe only works for muffins though. I tried to make a loaf and even after an hour hour the center did not bake entirely.

The sauce for this is great! I made a few changes that turned out great. For vegetables I added broccoli, green beans and green peppers. I didn't have any bean spouts, so skipped them.

Delicious Egg Salad for Sandwiches

I altered this recipe to be a healthier version. I used only the egg whites and light mayo. I didn't measure the mayo or mustard, but I'm sure I reduced the amount of mayo and increased the mustard. I left out the onion because I didn't have any. I also added chopped celery and dill pickles. Very tasty!
