Roasted and Curried Butternut Squash Soup

When roasting, add a touch of olive oil to the veggies. Used chopped, bagged butternut squash. Roast for the same amount of time as the onion and garlic, about 50 minutes. Can use Lean Cream instead of yogurt. Used 1/2 as much brown sugar as called for.

Kielbasa and Cabbage

Cooked slowly for 1 hour. Chopped cabbage as suggested, used 1/2 as much sugar as called for, cut Kielbasa in rings and browned before adding to cabbage mixture for the last 15-20 minutes. Do not reduce amt. of caraway seeds. Served with oven roasted potatoes and dark beer.

Asparagus with Parmesan Crust

Slow Cooker Scalloped Potatoes with Ham

Cauliflower Cheese Pie

Excellent recipe. Did not change anything. Do only if you have lots of time to cook and are in the mood, but is definitely worth the time and the steps. Chardonnay is the right wine, but must be a big chard.

Suki's Spinach and Feta Pasta

Cooked mushrooms with onion and garlic. Added tomatoes with spinach later. Used more spinach than called for. Served with Chianti but could also go with Pinot Gris or Retsina.

Spicy Indian (Gujarati) Green Beans

Served with Tandoori fish, rice, and nan. Good with Chardonnay. I cut back on the red pepper and oil, and it was plenty hot but not overpowering. Restaurant quality food.

Used Swai and left the fillets whole. Cut back on the spices and it was still very flavorful. Did not cut back on the garlic. Served with Chardonnay, Indian green beans, rice, and nan.

Grilled Cabbage II

Chop in large pieces rather than wedges. Cook for 45-50 minutes. Use olive oil, not butter. Add extra spices. Add brats to grill for final 10 minutes. Serve with roasted potatoes and dark beer.

Spaghetti Squash I

Bake squash for 45 minutes. Scoop out all seed junk. Firm flesh becomes spaghetti. Add extra garlic plus whatever other appropriate herbs you like. Use Kalamata olives, halved. Serve with interesting bread, salad, and Pinot Noir.

Creole Catfish Fillets

Great recipe! Grilled on grill tray covered with foil and heavily sprayed with PAM. Did not stick! Served with fresh lima beans, salad, and Blue Dog wine. If using red fish, grill for 12 minutes on medium heat.

Shrimp Lemon Pepper Linguini

Made 1 1/2 times the sauce as others suggested. Used 1 veggie boullion cube in place of chicken broth. Served over lemon pepper fettucini. Served with lemon wedge. Used less butter. Perfect with Morissette Angel Chardonnay.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Added the chopped garlic. Made with low fat veggie cream cheese instead of boursin. Served with Viogier. Added the asparagus for 3 minutes instead of 5 minutes. Fresh parmesan on top of pasta dish. Excellent company food.
