Mom's Zucchini Bread

Reviewed: Jun. 24, 2012
My child loved this recipe, and ate three servings! I made this into muffins and she didn't even notice the green flecks of Zuchinni in there(she is so picky). What a great find! I was running low on oil, so I had to substitute 1/2 cup of fat free greek yogurt instead, and I only sprinkled a little of the cinnamon( I was low on that as well). I added a splash of molasses for color and they turned out great with these substitutions.

Japanese Ginger Salad Dressing

Reviewed: Jun. 11, 2010
This is a vinagarette dressing (not a mayonnaise- based dressing as you can tell if you read the ingredients). I followed some of the other reviewers suggestions and added some rice wine vinegar (1TBS) and some white vinegar (1TBS). I also added 1 TBS of white sugar. With these changes it tastes exactly like the ginger dressing served at every Japanese restaurant that I've ever visited. I made the salad with finely chopped carrots, green onions, and julienned cucumber over shredded lettuce, and served it alongside grilled steak. This was exactly what I was looking for. Thanks for a great recipe!

Chocolate Mousse I

Reviewed: Jun. 7, 2010
This recipe was very tasty and quick to prepare. There was one scary moment when I accidentally added the liqueur to the melted chocolate before adding the eggs. DON'T DO THIS. It really got stiff and hard to manage, luckily the egg yolks went in smoothly and it turned out well (with lots of beating). I will follow the instructions precisely next time. Folding the egg whites into the chocolate properly is also key, if you don't keep folding you end up with tiny (egg white) lumps. I will definitely be trying this again with different flavoring as well! Also, to the reviewer who said they ended up with a burned chocolate taste: watch the chocolate when melting it, if you let it scorch, your mousse will not work out. Please give this recipe a try, it really is delicious!

Mandarin Chicken Pasta Salad

Reviewed: May 25, 2010
This salad was superb. The dressing tasted so delicious that I have to admit that I am suprised that dry onion soup mix made it. The fresh ginger really added an authenticity to the taste, and the left-over grilled chicken that I used blended very nicely with the other flavors. I was looking for something that would stand alone as a dinner to take for a picnic and this was just right. Thanks for the tasty recipe!

Sunday Shrimp Pasta Bake

Reviewed: Mar. 28, 2010
*EDITED* * I have to edit my initial review to give this recipe higher remarks after letting it sit overnight in the fridge. This recipe tastes SO good if you let it sit overnight before heating and serving. This information would have changed the number of stars I gave this to 4 or higher.* Without letting the flavors blend for a while before cooking, it really tastes a lot like rotelle dip and pasta.

Chocolate Cakes with Liquid Centers

Reviewed: Jan. 13, 2010
I made this according to the directions the first time and really felt that something was missing so I tried them again, with the following changes: --added 2 tablespooons of flour (instead of 2 tsp), a rounded 1/4 cup of sugar, and 1/2 tsp each of Kahlua and vanilla to the chocolate and butter mixture just before combining with the other ingredients. I baked this in two 10 oz ramekins, buttered and dusted with cocoa powder (as some other reviewers recommended), for 10 minutes. These were amazing! My friends think I slaved in the kitchen over this dessert!!

Best Fried Green Tomatoes

Reviewed: Aug. 19, 2009
I really feel that the coating for these deserves high marks. It was crispy and added just the right crunch to the texture of this dish. I also added some parmesian cheese to the top while they drained on the paper towels. However, something was just missing (for me) in this recipe. Hey, I guess I'm just not a fan of the flavor of fried green tomatoes, but I will certainly be using this coating method for other frying in the future. Great job!

Chocolate Cream Cheese Frosting

Reviewed: Jul. 28, 2009
I gave this one a perfect score because it turned out perfectly, and it tasted just as I expected. The slight tart flavor was perfect to compliment the dark chocolate cake that I made, and it was also fluffy and rich. No more store-bought frosting for me, this one's a keeper! Thanks for a great recipe.

Chocolate Chess Pie

Reviewed: Jul. 10, 2009
I needed to use a pie crust, and was in the mood for chocolate and this recipe really fit the bill! I carefully melted the butter--twice because it accidentally boiled in the microwave the first time and I had to start over-- (I also used 1/4 cup instead of 1/2 of butter). I followed the baking directions exactly, including the cooking times and it turned out great! It tasted like a chocolate lava cake (because I couldn't wait for it to cool and cut it while it was hot). It was everything I hoped it would be. The texture of my pie looks nothing like the one shown in the picture, but I wasn't really looking too hard at it as I scarfed it down. What a really superb pie, thanks!!

Corn and Shrimp Salad

Reviewed: Jun. 28, 2009
This recipe was perfect! I needed a cool shrimp salad to take to the pool for dinner. It was easy to make, used readily available ingredients, and tasted delicious. It made just the right amount for two people. I plan to double or triple it and take it as a side to our fourth of July picnic. I had to substitute roasted red peppers (that's what was in our pantry) and frozen corn and shrimp, and it still turned out great. Thanks for a delicious recipe!
