Classic Bran Muffins

Reviewed: Mar. 6, 2010
These are very good. I, too, used applesauce in place of oil and a bit more buttermilk, as the wheat germ appeared thick. I used 1/3 cup brown sugar and 1/3 cup splenda. Next time I would use a little bit more splenda, as it could have been a touch sweeter. Overall, delicious!

French Toast Casserole

Reviewed: Dec. 28, 2009
I know that some people reviewed this recipe and complained about it being soggy but I decided to give it a shot anyway. Well, mine turned out soggy as well. I was not happy with this at all and it has turned me off from french toast casseroles all together.

Roquefort Pear Salad

Reviewed: Dec. 28, 2009
Made this for Christmas dinner and everyone raved about it. I didnt add the avocado because I didnt want it to brown in the salad. I also added dried cranberries. For me, however, I thought that the dressing was too sweet. I did add some diced shallots to it and that helped a little bit.

Ginger Glazed Mahi Mahi

This was so easy and so yummy. I used ginger powder and garlic powder. The end result was wonderful and the sauce so good over the fish. I served with brown rice.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Oct. 26, 2009
This was very good but a little salty. I would cut back the dressing to reduce salt content.

World's Best Lasagna

Reviewed: Oct. 4, 2009
Really good. Made triple the gravy and froze 2 containers full. Its worth it to make extra since you are doing the work! The fennel seeds added a nice taste, however I would cut it back to half of what the recipe calls for. In addition, I used fresh basil from the garden. Overall, my husband said this was the best lasagna he has ever had! I will use this gravy recipe exclusively for all my red pasta meals!

Peach Cobbler II

Reviewed: Sep. 23, 2009
This was very good, however I would not used a 9x11 pan. It was too thin. I would use a pie pan for this recipe. Also, I used whole wheat flour and was still very good. You could taste a difference but I thought it was still very good.

Crustless Spinach Quiche

Very good and a healthy lunch for the week. I added low fat feta cheese, and sauteed mushrooms with the onion. I then put the mix in greased muffin tins and had these little treats all week! Yum!

Easiest Eggplant

Reviewed: Sep. 23, 2009
This was just okay for me. I think next time, I will just use egg white and breadcrumbs and bake the same way. Spreading the mayo was a little time consuming and not really worth the effort in my opinion.

Real N'awlins Muffuletta

Reviewed: Sep. 23, 2009
This was good, not great. I didnt care for the taste of the celery seed in the olive mixture. My husband liked it, but I could taste it too much. I used a whole wheat bread that was okay with the recipe, not quite as good as a white italian loaf would be but for health reasons, I substituted.

Deb's Scallops Florentine

Reviewed: Sep. 23, 2009
This recipe was so yummy! This is the first thing I have ever reviewed on All recipes but felt compelled to do so based on the ease and taste of this particular one! I didnt cook the scallops prior to baking (baked for 10 min) and broiled for the last 5 minutes. The texture of the scallops were great and the spinach mixture was to die for! My picky 2 year old loved it as well!
