Ricotta Gnocchi

Yummy!!! Easy to make and very tasty. I used garden tomatoes and this was great. I also added some sausage links (cut up) to make this a complete meal.

Yummy, Yummy! I did have to make a few changes because I didn't have all the ingredients. I used potatoes diced (suggest boiling to soften) and cheddar cheese and sour cream for the sauce. I also added diced chicken.... it was delicious.

Eggplant -- Easy, Good and Tasty

Honey Roasted Red Potatoes

My family loved these! Thanks for a great recipe. I didn't have dry mustard powder, so I used 1 T of reg. mustard and it just as yummy!

Eggplant Parmesan II

I would give this recipe 10 stars if I could! I have tried a few different versions and this is by far my favorite. I "sweat" the eggplant for about an hour before starting and I think it made it even better. Thanks for a simple but good one!

Baked Pork Chops I

I think the bake time should vary by how long you brown the pork chops and how thick they are. I think I over cooked them. It had a good flavor but they were a little dry. I may try it again and change a few things.

Pesto Pasta with Green Beans and Potatoes

I also substituted the yogurt with sour cream and added cooked chicken. This was a great meal. I made my pesto from basil in my garden!

Hamburger Potato Casserole

This was very tasty and was gone in one sitting. I will def. make this again. I have a toddler and he even finished his plate! I added fresh green beans from the garden and it was great. Next time I will make more.

Burrito Pie

This was just wonderful! I double layered the tortillas so that they didn't get soggy. I also added taco seasoning and salsa (since I didn't have some of the ingredients) Top it off with sour cream and this is a great meal! I will certainly make this one again!!!
