Baked Lemon Chicken
Really good!!! I was wary of this recipe because of all the comments about sogginess but gave it a go anyway. I didn't have chicken breasts so I used drumsticks instead (4 oz worth). Used 1 tbs of olive oil at the suggestion of another reviewer and baked for about 50-55 minutes uncovered. Turned out absolutely great! A bit soggy at the bottom but the rest of it was good. Would recommend using foil at the bottom to make for an easier clean up. Will definitely be making it again - my roommate loved it too!
