Charley's Slow Cooker Mexican Style Meat

This was the best!!! I wish I could give it 10 stars. I don't 10 star nothing! But this... oh, it was so good, my friend is calling me wondering how to make it. I think from now on, I'll make 2 of them side by side in crocks and freeze the meat for later use. I read the reviews here and made changes accordingly: CHANGES: 1. Replaced green chili peppers with a small amt. of fresh jalepeno peppers 2. Cook on low for 8 hours overnight, remove to shred, return for 1.5 hours on low adding 1 tsp. Paprika and 1/2 tsp. Cumin 3. I used mild hot sauce, not super hot because I think it takes away from the other flavors, but still used 5 oz. 4. 1 tsp. Beef flavored bullion... use it from Byler's down the road. 5. Increased chili powder to 2 tsp. 6. Next time, I think I'll use fresh garlic and garlic powder.

Baked Garlic Parmesan Chicken

Very good! I added melted butter to the oil mixture and used Italian Seasoning to spice it up a bit. Pounded the meat to make it even and then at the end of cooking, broiled for several minutes. Will make this again and again, I'm sure!

Rosemary Ranch Chicken Kabobs

I guess I was expecting a much better taste. To me it was a little bland. I salted after cooking to make it taste better. It did, but I'm not quite sure what this needs; more spices I guess. I saw that others liked this so much that I just had to try it. Glad others liked it though! Will tweak it a bit and maybe repost my thoughts. One thing I gotta say is that I like the idea of doing kabobs... I've not done them in a very long time!

Cream Cheese Jalapeno Hamburgers

I added some stuff. Made it into like a meatloaf with egg, bread crumbs, worster. sauce, milk, seasonings. It turned out GREAT! They puffed up in fact which made it even better. Mom used to fix these years ago and called them "pocket burgers" ... very good!

Slow Cooker Beef Roast

I was really surprised at how well this turned out. Not dry and very tasty. Left out the veggies and cooked them separately as I didn't think I would like them in with the bbq sauce. Hubby really liked this recipe!

Barlow's Blackened Catfish

I've NEVER liked catfish 'till now! This was wonderful. I added a little paprika, but that's about all. Yummy, indeed. Will cook this over and over, I'm sure. I made a little bottle of the ingredients and put it aside so next time, I just pull the "catfish" mix out of the spice cupboard.

Yellow Squash

I didn't like it. Just not my thing, I guess. Found it very bland. Still have it in the fridge... thinking I might add some spices to it. Good idea to use up squash though. I see others like it!

Pepperoni Stuffed Zucchini

This was so yummy. Put 4 stars and not 5 'cuz I changed some things. Microwaved the shells before putting in oven. Still found I cooked it for 20 mins. anyway. Added some cumin, butter, monterey jack, red pepper, and italian seasoning. I'm sure I would like this with other meats too... maybe ham even? Thinking any "pizza" topping would be good, in fact! Wonderful way to serve zucchini... will use this recipe over and over, I'm sure!

Refried Beans Without the Refry

This was excellent! Did not add the pepper because we didn't have one, so I put some red pepper flakes in it instead. I TOTALLY messed up and put in cinnamon instead of cumin! Oh my! So be sure you watch which brown spice you use :) Before mashing, I split it into two bowls to be able to serve some as whole beans and some as "refried" without the refry! Thanks for the recipe...

Chicken Breasts with Herb Basting Sauce

This was very yummy! I just made it tonight. Wish I could have everyone over for dinner and serve this. I didn't have sage, so that was not in there, but I added cumin and 1 C chicken broth (needs a bit more than that even) and put new potatoes and a little bit of yellow squash in the pan with it. MUST DO: baste, baste, baste! I cooked 3 chicken breasts (boneless) on 375 for 1 hour, 10 mins. Overdone for most people, but that's how I like my chicken. I'm sure for others, 50 to 60 mins. would be fine. Next time, I'm adding more chicken broth and more rosemary!

Vegetarian Southwest One-Pot Dinner

This was wonderful! I'm not a vegetarian, but wow, this was good. I can't eat much of it though with low blood sugar issues... too many carbs for me, but my mouth waters sitting down to even a little bit of it. I changed a couple things: used fresh tomatoes instead of canned, and canned beans, not draining them. Also, I excluded the cheese altogether and then when served, added sour cream, a few fresh tomatoes and avocado. Voila! Yummy. My hubby is SO not a vegetarian and so I put cooked sausage in it for him and he loved it :)
