Chicken Piccata with Artichoke Hearts

Chicken and Dumplings III

Nice base recipe. I added a full cup of water during the cooking as there wasn't much liquid. I was afraid it would be too watery but it still thickened up nicely after the dumplings finished cooking. Also added chopped carrots and more seasoning as I didn't have celery or celery seed. I was afraid I overmixed my dough (have made dumplings before and wasn't thinking as I mixed everything together really well) and they turned out perfect!

Quick and Easy Alfredo Sauce

So fast and easy! I cut down a little butter and milk and added oregano, parsley and a dash of nutmeg. My cheese butter mixture seemed clumpy but it came together when I added the milk and kept whisking. Great recipe!

Authentic Cincinnati Chili

I wasn't sure what to expect with this recipe but I wanted something like Skyline. This did not disappoint! I didn't have any cloves so I just used a little more allspice (ground, didn't even know they were berries). I also added a dash of turmeric, coriander, and nutmeg as I saw it used in other similar recipes. I also only had one small can of tomato sauce (oops) so I added a small can of tomato paste and extra water. Everything else, I used according to the recipe. I may have cooked the meat too quickly because I broke up several big chunks during the three hour simmer but it was still great and the texture came together in the last hour. I also added kidney beans a few minutes before serving since that's how I like it. It def took some time but was well worth it!

Homemade Flour Tortillas

Delicious Ham and Potato Soup

Easy recipe! I sauteed the onions with some garlic, left out the celery (didn't have any) and added some slivered carrots and frozen corn. My butter/flour mixture didn't seem to thicken and when I added it, I wasn't sure what was going to to happen but I put the lid on and I walked away to get out bowls and spoons and came back and it was perfectly thick and creamy! Warning, the "8 servings" listed was enough for two large appetites with a small bowl left over.

Scottish Shortbread II

Have tried other shortbread cookies from this site and I think these are the easiest! I don't have a cookie press and normally I had to use a small glass to cut out cookies and they were VERY delicate. I flattened the dough in a round 9" springform pan and it was super easy... the hard part is waiting for them to cool.

Buttery Soft Pretzels

These turned out better than I anticipated since my dough didn't rise a whole. And they do taste buttery and I did not use any butter, even after they were out of the oven. I might add cut up jalapeno and cheese to the batter next time, as they are great for savory pretzels, I just cut some of the sugar! I also use much less salt to top.

Delicious Peanut Butter Cookies

Great cookie! Used butter instead of shortening and cut down a little on the sugar. I was afraid the yield would be too much but I only got 34 cookies instead of 4 dozen luckily. Very soft, savory cookie.

Simple White Cake

I halved this recipe and I ended up with 8 overflowing cupcakes! No bother, they are very sweet and do not even need frosting. I didn't use a mixer but I tried to stir everything as much as possible to avoid any denseness issues and my cupcakes are great. They are light and airy taste great, if not a bit too sweet. I added a 1/3 cup of nonfat milk (based off of other reviews to add more and I only had nonfat). Very good!

The Ultimate Chocolate Chip Cookie

After being a bit disappointed with the recipe on the bag of chocolate chips that I used last time, I tried this one which was actually easier. I was worried about this whole "flat cookie" issue, so after halving the recipe (which still made over 3 dozen regular sized cookies), I used 1 tsp baking powder and 1/2 tsp baking soda - don't ask me why those measurements, I apparently misread the recipe - and they turned out great! I also used soy milk and unsalted butter since that's what I had. They certainly weren't "too flat" or even noticeably flatter than any other cookie I've made. The whole "flat cookie" thing was really a non-issue for me with this recipe. They are great even without the chocolate chips, since my last scrape around the bowl yielded a chip-less cookie. EDIT: Three days later, the cookies were still moist and yummy!

General Tao Chicken

Great starting point. I cut the sugar down and it was still a bit too sweet (almost like sweet and sour chicken), I think from the oyster sauce since sugar was one of the first ingredients. Good taste but I will add more heat and maybe just a pinch of sugar next time. I had never been able to get the restaurant style crust though until this recipe - it def came out looking pretty good. My husband was really impressed!

Black Bean and Salsa Soup

Quick and tastes great. I added some sauteed onion and garlic and a bit more cumin and a couple hits of Frank's hot sauce and fresh cilantro and it was amazing. I liked it better with cheddar cheese on top instead of sour cream. Nice base recipe, lots of options to fit your tastes!
