Sweet Potato, Carrot, Apple, and Red Lentil Soup

We made this soup for lunch today. It was quick and inexpensive to make. My husband and I really like this soup. It went well with the broiled tomato sandwiches (also from this website). My 7-year old lived it too.

Best Lemonade Ever

Chunky Monkey Pancakes

Delicious!!!! My 1-year old son and 6-year old daughter gobbled these up. These will be in regular rotation in our house! Because the baby can't have nuts yet, I left the nuts out of the batter, but sprinkled them on top of mine before eating. This worked well. These were very quick and easy too.

Pumpkin Pancakes

Yay!! These are delicious! I made these this morning and they were a hit with everyone! My barely 2-year old ate 3 pancakes, and my super picky 6-year old loved them too. I made half the batch as directed, then added chocolate chips to the second half of the batter for the kids. Both were delicious. These will ve in regular breakfast rotation this fall. Simple/quick enough to make on a school morning.

Sarah's Applesauce

Loved this! My 2-year old has been on an applesauce kick, so I decided to make homemade. He wouldn't touch it, butmy husband and I loved it! I will definitely be making this again and again. Simple too.

Easy Mashed Potato and Roasted Vegetable Enchiladas

These were incredibly easy and delicious! I did everything as written, except that I omitted the mushrooms. I used an organic instant potato that had less "weird" ingredients than the traditional instant potatoes. Husband loved them too. This will be added to our regular rotation. I made the during my toddler's afternoon nap and then just heated them in the oven at dinner time. They tasted even better reheated for lunch the next day.

My Mother-in-Law's Plum Bread

Made this today to use up some plums the kids didn't eat this week from our CSA. Oh my goodness. This was so easy and so delicious. My 10-year old declared it her favorite dessert ever and my picky 6-year old finished his dinner after trying one bite of this (in hopes of getting a piece for dessert). We will add this to the regular rotation. It's more like cake, and very sweet (bit bit overly so). We followed the directions as written, except we used about a half cup of extra plums because we had them on hand and they were already sort of past their prime. With the extra fruit, we needed about 10 minutes longer on convection to bake through. So glad I tried this!!!!

Heavenly White Cake

Made these according to directions, but added the additional 1/2 cup milk that so many others recommended. I thought these were great. Just the right amount of sweetness. Fairly moist and fluffy (as far as homemade goes). The whole family enjoyed them. I made 19 cupcakes with the batter, cooked them about 24 minutes, and frosted with pink whipped cream frosting. Mmmmm!

Crazy Cake

I made this tonight as directed and thought it was a wonderful cake! I made as directed except that I put all the ingredients in a Kitchenaid mixer and then poured the batter into a pan sprayed with cooking spray. I loved that this was so easy to make! I also loved that this was vegan-no dairy or eggs. I thought the cake was moister than most home made chocolate cakes-lighter. This will probably be my "go to" cake for chocolate cakes.

Strawberry Coffee Cake

Perfect!! I had everything on hand for this one, and some strawberries that I needed to use up. This whipped together quickly and turned out well above my expectations. I made as directed and thought the pecans really added to the recipe. This was great as dessert tonight and will be great with coffee in the morning.

Strawberry and Mandarin Salad

We just finished eating this for dinner with corn on the cob as a side dish. It was delicious! I cheated a little bit and used pre-packaged Emerald brand candied walnuts instead if making my own candied almonds so this was a nice, quick (15 minute) meal-perfect for a summer weeknight! My husband loved it too! We will add this to our meal rotation! The salad dressing was easy to make and the perfect accompaniment.

Chocolate Chip Banana Muffins

I made these according to directions with one minor exception-I used strawberry/banana yogurt because I didn't have plain. I thought these were moist and delicious, and very quick and easy to make. I used 2 bananas. My 2 kids (2 and 7) devoured them! I will be adding this to our regular rotation! Thanks for sharing the recipe!

Vegetable Lo Mein

My husband made this for dinner tonight to compliment the Orange-Ginger Tofu Triangles (also from this site). What a nice pairing! This is the kind of food that makes you glad to eat at home : ). We made a few modifications-we used vegetable broth instead of chicken, and omitted the mushrooms and sprouts (substituted more peppers). Both of the kids ate the lo mein (7-years and 3-years). We'll be making this again and again and adding this to our family recipe rotation.

Roasted Garlic Cauliflower

This recipe got both of my children (aged 7 and 3) to eat cauliflower. Amazing! My 7-year old actually said "wow. I like this." My husband said that this his favorite cauliflower recipe by far. I followed the directions as written. Can't wait to make this again!!!!

Corny Mexican Salad

A really good recipe. I made as directed this time around, with just a little less oil. Next time I would double the tomato and avocado and leave everything else the same. And there will be a next time :-). We served this as a side to the easy mashed potato and roasted vegetable enchiladas (also from this site). It will make nice leftovers for lunch tomorrow, too.

Lemon Blueberry Bread

Delicious!!! I followed the directions for the bread exactly as written, but, as other reviewers suggested, subbed powdered sugar for the regular sugar in the icing. Easy to make and sooooo very good!! It tasted more like a delicious cake than a breakfast bread; we happily ate it for dessert one night and breakfast the next morning :-). I will definitely make this again and again! I am trying not to eat the whole loaf right now! I didn't have any problem getting the bread out of the loaf pan; I sprayed the glass pan with cooking spray, and let it sit for about an hour after I pulled it from the oven., ran a butter knife around the edges, and it came out beautifully. So moist and sweet!
