Spicy Vegan Potato Curry

This was pretty good. Similar to many of the curry recipes we already make. My husband liked this was because he thought it was saucier than some of our other recipes. My 6-year old liked the combo of peas and potatoes. I thought it was pretty good, but as ridiculous as this sounds, I thought the spice combination was a bit bland. The spice (hotness) was good for purctastes, but the others didn't really stand out. We will probably make this again, but not very often.

Navratan Korma

I am a vegetarian who loves Indian food. Navratan korma is my favorite! There is another vegetable korma recipe that I use at home which I really like, but it's not quite perfect. So when I saw this one I was very excited! Unfortunately, my husband and I were disappointed. We did not include the paneer since the grocery stores near us did not carry it. I also only used 1/2 teaspoon of cayenne for our 6-year old's sake. I still thought the hotness was disproportionate to the other spices. We couldn't taste any of the nice flavor from the turmeric, etc. This dish was not bad, I just didn't think it was that great either. This didn't seem to taste much like the navratan korma we order at Indian restaurants. We probably will not make this again, and will continue to look for a good, authentic korma recipe.

Dark Chocolate Cake I

I thought this was an average tasting cake. I followed the directions as written and thought it came out dry. I did not have any problem with sticking to the pan.

Quinoa Black Bean Burgers

Oh my! These were the best veggie burgers we have ever had! I was not optimistic since I have tried many recipes before that didn't work, but these were SO GOOD! This was my first time cooking with quinoa. The recipe was simple to make. My husband and picky 7-year old loved them, too! We made them as directed except we grilled them. We will be making these all summer long. Thank you so much for the recipe!!!

Simple White Cake

These were not to my liking! I made them for my daughter's first grade birthday celebration at school with pink buttercream frosting. They looked great, but they smelled and tasted like corn muffins. The first grade class didn't like them much either. They licked the frosting off, complained that they smelled like corn. I was very embarrassed. It could have been something I did in preparing them I guess, but I do bake often and I made sure to follow the directions as written and to let the butter cream long enough. We won't be trying these again, and I will make sure to test future recipes before bringing them to school! : )

Lemon Cupcakes

Heirloom Tomato Salad with Pearl Couscous

My husband made this last night with the black bean quinoa burgers (also from this site). Delicious!!!! Our market did not have heirloom tomatoes this week, so I bought 2 pints of mixed tomatoes (cherry, yellow, grape) and used those instead. We also used dried thyme since we didn't have that one in our herb garden. This will be a " go to" salad. It works for side dishes, lunch main dishes, potlucks, etc. so glad we tried this recipe!!!

Homemade Tomato Sauce I

Made this twice now and think it's a pretty good recipe and a nice way to use up our garden's tomatoes! Very time intensive, but sauce is. I added a jalapeño pepper and some red pepper flakes the second time around.

Strawberry and Mandarin Salad

We just finished eating this for dinner with corn on the cob as a side dish. It was delicious! I cheated a little bit and used pre-packaged Emerald brand candied walnuts instead if making my own candied almonds so this was a nice, quick (15 minute) meal-perfect for a summer weeknight! My husband loved it too! We will add this to our meal rotation! The salad dressing was easy to make and the perfect accompaniment.

Chocolate Chip Banana Muffins

I made these according to directions with one minor exception-I used strawberry/banana yogurt because I didn't have plain. I thought these were moist and delicious, and very quick and easy to make. I used 2 bananas. My 2 kids (2 and 7) devoured them! I will be adding this to our regular rotation! Thanks for sharing the recipe!

Crazy Cake

I made this tonight as directed and thought it was a wonderful cake! I made as directed except that I put all the ingredients in a Kitchenaid mixer and then poured the batter into a pan sprayed with cooking spray. I loved that this was so easy to make! I also loved that this was vegan-no dairy or eggs. I thought the cake was moister than most home made chocolate cakes-lighter. This will probably be my "go to" cake for chocolate cakes.

Mama's Best Broiled Tomato Sandwich

Made this for lunch today to accompany some soup. I followed the instructions, but probably used more fresh, grated Parmesan cheese than called for ; ). We had all of the ingredients on hand, and this was quick and easy to assemble (10 minutes total prep/broil time). It also tasted delicious!!!! My husband loved it too. We will add this to our regular lunch rotation.

Good for You Greek Salad

We had this as a side dish with dinner tonight. We had plenty of cucumbers in the garden. It was very good. We followed the directions as written, although we used more olives than listed. This was better and more flavorful than other cucumber-based salads we have tried. This probably won't be a regular in our rotation, but we will probably make it once or twice a season.

Soba with Toasted Sesame Seed Sauce

We made some substitutions as others have recommended (brown sugar instead of white, and rice vinegar instead of balsamic), and we added blanched snow peas, red pepper, and green beans. With these additions, I thought this made a really nice accompaniment to our main dish (orange ginger tofu from this site). We did not, however, save the leftovers since neither my husband or I thought this would be good on it's own the next day. It was also a bit pricey - the sesame seeds alone (which we cut back on per others' suggestions) were over $7. Considering that, and the fact that the children wouldn't touch it, we will not likely make this one again.

Strawberry Coffee Cake

Perfect!! I had everything on hand for this one, and some strawberries that I needed to use up. This whipped together quickly and turned out well above my expectations. I made as directed and thought the pecans really added to the recipe. This was great as dessert tonight and will be great with coffee in the morning.

Sour Cream Chocolate Frosting

I made this tonight to top a basic chocolate cake. It was really easy and really good! I loved that the frosting was creamy and easy to spread. I am not a fan of the typical buttercream frosting. I thought this was much better. I did cut down on the powdered sugar.

Garden Pasta Salad

We thought this was just okay. We brought it to a Super Bowl party and it didn't go over that well. A nice, basic pasta salad, but there are so many more interesting pasta salads out there that I wouldn't make this one again. It also seemed like a ridiculous amount of salad dressing. If I am going to eat that much oil and fat, I might as well have something really good (like a dessert)! On the plus side, it is very quick and easy to assemble and most of the ingredients we had on hand.
