Quick and Easy Brownies

These are delicious. They are not a thick, chocolately brownie, but they are good. Similar to a box mix, but lighter. Very quick to make. I used 1 cup flour as other reviewers suggested. In the oven they looked thick and cake like, but once they cooled, they were not cake like at all. Not chewy either.

Spicy Vegan Potato Curry

This was pretty good. Similar to many of the curry recipes we already make. My husband liked this was because he thought it was saucier than some of our other recipes. My 6-year old liked the combo of peas and potatoes. I thought it was pretty good, but as ridiculous as this sounds, I thought the spice combination was a bit bland. The spice (hotness) was good for purctastes, but the others didn't really stand out. We will probably make this again, but not very often.

Cucumber Sandwich

We made these for lunch and they were pretty good - very fresh tasting. (We omitted the sprouts since we do not like them). They were very fresh tasting. More filling than I expected they would be, but definitely could use an accompaniment (soup, salad, etc.). I might make these again, but wouldn't add to the regular rotation.

Healthy Garden Salad

I did not love this salad, but my husband did. I did not have grapeseed oil, so I did substitute with olive oil. Everything else we made as directed. I think that I just do not like frozen edamame. My husband had bowl after bowl.

Garden Pasta Salad

We thought this was just okay. We brought it to a Super Bowl party and it didn't go over that well. A nice, basic pasta salad, but there are so many more interesting pasta salads out there that I wouldn't make this one again. It also seemed like a ridiculous amount of salad dressing. If I am going to eat that much oil and fat, I might as well have something really good (like a dessert)! On the plus side, it is very quick and easy to assemble and most of the ingredients we had on hand.

Orange-Ginger Tofu Triangles

WOW!!!! Absolutely amazing!! I made this as written with one exception-I used less oil. I used about 2 tablespoons of extra virgin olive oil instead of the vegetable and sesame. I was a little skeptical when I took it out of the oven since the tofu was soft (I generally prefer my tofu with some crisp on the outside-either grilled or sautéed), but this changed my mind. Definitely the best tofu recipe I have had by far! This is going into our regular meal rotation. We had baked potatoes and broccoli with it. Mmmm! It has some kick to it, but i thought it was the perfect amount of heat. Make this dish!!!

Applesauce Bars

This was just okay. The frosting was ridiculously sweet, even for frosting. My husband ate it, but my 2-year old, 6-year old, and I didn't get past the first couple bites. I might try again without the frosting and use a smaller pan to make thicker bars. I would also add raisins as other reviewers suggested. Or I may not try these again at all. Disappointed.

Easy Mashed Potato and Roasted Vegetable Enchiladas

These were incredibly easy and delicious! I did everything as written, except that I omitted the mushrooms. I used an organic instant potato that had less "weird" ingredients than the traditional instant potatoes. Husband loved them too. This will be added to our regular rotation. I made the during my toddler's afternoon nap and then just heated them in the oven at dinner time. They tasted even better reheated for lunch the next day.

Loved this! My 2-year old has been on an applesauce kick, so I decided to make homemade. He wouldn't touch it, butmy husband and I loved it! I will definitely be making this again and again. Simple too.

Pumpkin Pancakes

Yay!! These are delicious! I made these this morning and they were a hit with everyone! My barely 2-year old ate 3 pancakes, and my super picky 6-year old loved them too. I made half the batch as directed, then added chocolate chips to the second half of the batter for the kids. Both were delicious. These will ve in regular breakfast rotation this fall. Simple/quick enough to make on a school morning.

Crispy Cucumbers and Tomatoes in Dill Dressing

Pretty good. This was a quick and easy way to use up some of the extra cukes from our garden. Simple and refreshing as a side dish, and tasted even better the next day. My husband used leftovers as a sandwich spread the next day (with turkey and swiss cheese) and raved about it.

Chunky Monkey Pancakes

Delicious!!!! My 1-year old son and 6-year old daughter gobbled these up. These will be in regular rotation in our house! Because the baby can't have nuts yet, I left the nuts out of the batter, but sprinkled them on top of mine before eating. This worked well. These were very quick and easy too.

Ginger Veggie Stir-Fry

Pretty good. The vegetable combination was excellent and I found the recipe worked well as written. I thought it was a little bland, but I certainly could adjust the recipe next time to account for this. My husband liked it better than I did. Nice and quick! We served it with rice and some frozen potstickers. This won't make it to our regular rotation, but I won't rule out making it again.

Honey Balsamic Vinaigrette

Delicious balsamic dressing. We served this over a spinach and romaine salad with tomatoes and fresh mozzarella. Delicious. I like it better than our old standby- Annie's organic balsamic dressing.

Absolutely Fabulous Greek/House Dressing

Made this tonight for some souvlaki. Delicious. I followed the recipe as written, but scaled it down for a family of 4 and used a food processor to mix. This will go into the regular rotation. I will never buy Greek dressing again!
