Eggplant Parmesan II

We are vegetarian, but I've never made eggplant Parmesan before. Truth be told, I didn't think I liked it that much. But our CSA gave us 2 eggplant this week, so I figured we'd give it a try! My husband made this according to the recipe except we only used 2 eggplant. We all thought it was delicious! I wouldn't change a thing next time either, and there will be a next time! In fact, I will add this recipe to the rotation! We don't eat a lot of pasta, so we served this with a side of potatoes and a salad (also from our CSA) instead of over pasta. So good!!!!

My Mother-in-Law's Plum Bread

Made this today to use up some plums the kids didn't eat this week from our CSA. Oh my goodness. This was so easy and so delicious. My 10-year old declared it her favorite dessert ever and my picky 6-year old finished his dinner after trying one bite of this (in hopes of getting a piece for dessert). We will add this to the regular rotation. It's more like cake, and very sweet (bit bit overly so). We followed the directions as written, except we used about a half cup of extra plums because we had them on hand and they were already sort of past their prime. With the extra fruit, we needed about 10 minutes longer on convection to bake through. So glad I tried this!!!!

Quick Black Beans and Rice

Made this for lunch today for lunch and it was a huge hit-quick, economical, and delicious.We served it in burrito shells with fresh salsa, cheese, hot sauce and sour cream, but it was great on its own, too. My husband used the leftovers as a dip with tortilla chips. My 9-year old even asked if we could have this for dinner sometime. We made it according to the directions except that we only used one cup of rice (all we had left in the pantry). This will be going into the lunch rotation!

Extreme Chocolate Cake

Super easy and delicious. I have no idea why this recipe has bad reviews. I am a self admitted "impatient" baker and a busy mom who has been looking for a homemade cake recipe that isn't dry. This is it. After many cakes (my kids are 9 and 5), I will finally stop looking. Made this last weekend and brought it to Easter dinner with the family. Everyone loved it. I made the cake according to the directions in a kitchenaid mixer and then baked them in two 9-inch round pans. In my oven, on convection, it was ready at 35 minutes. I made only half the recipe for the frosting and had PLENTY leftover. I made one change to the frosting-I substituted almond extract for the vanilla and this gave it an excellent taste! Thank you for this great recipe!

Coconut Tofu Keema

Had this for dinner to ifht with basmati rice. We made some changes based on the other reviews, and I am very glad I did! We used less oil. I cooked this in a Le Creuset pot and I still did not need 1/4 cup of oil. I also cut way down on the tomato sauce. I used 1 14-ounce can and I thought that was generous. The flavor was good, but not quite like the Indian we are used to eating :-). My 8-year old absolutely loved it. We all added generous amounts of cayenne pepper to our portions! This would pair nicely with a potato dish. The hubby asked to add this to the rotation. I will probably kick up the heat next time with dome turmeric and cayenne pepper.

Vegetarian Tortilla Soup

We thought this was pretty good. We will probably make it again, but not very frequently. Followed the directions, but substituted some fresh ingredients from our garden rather than use the canned tomatoes and chili peppers. It was spicy, but we like spicy.

Black Bean and Couscous Salad

My hubby made this for dinner tonight as a side dish for grilled vegetable fajitas. The only substitution he made was to use vegetable broth instead of chicken since we're vegetarian. We loved it! Light and delicious. It had a nice subtle flavor. Perfect for summer. Adding this to the recipe book! Thank you :-)

Heirloom Tomato Salad with Pearl Couscous

My husband made this last night with the black bean quinoa burgers (also from this site). Delicious!!!! Our market did not have heirloom tomatoes this week, so I bought 2 pints of mixed tomatoes (cherry, yellow, grape) and used those instead. We also used dried thyme since we didn't have that one in our herb garden. This will be a " go to" salad. It works for side dishes, lunch main dishes, potlucks, etc. so glad we tried this recipe!!!

Lemon Blueberry Bread

Delicious!!! I followed the directions for the bread exactly as written, but, as other reviewers suggested, subbed powdered sugar for the regular sugar in the icing. Easy to make and sooooo very good!! It tasted more like a delicious cake than a breakfast bread; we happily ate it for dessert one night and breakfast the next morning :-). I will definitely make this again and again! I am trying not to eat the whole loaf right now! I didn't have any problem getting the bread out of the loaf pan; I sprayed the glass pan with cooking spray, and let it sit for about an hour after I pulled it from the oven., ran a butter knife around the edges, and it came out beautifully. So moist and sweet!

Peanut Butter Cupcakes

I made these last night for some guests with chocolate sour cream frosting. It was a nice combo. I used the 1/2 cup applesauce and 1/2 cup oil recommended by another reviewer and thought they were slightly dry- next time I'll try the shortening. They were quick and easy to make and the short cooking time (we needed 20 minutes) really helped.

Gazpacho II

Made this for lunch today and it was delicious! I will be making this all summer :-). I took the advice of other reviewers and made some minor changes - omitted the oil completely, added 1 more tomato, a red pepper, and a jalapeño pepper. My husband, who has always been hesitant to try gazpacho at restaurants, tried it and loved it. We topped it off with some sour cream. Delicious!

Corny Mexican Salad

A really good recipe. I made as directed this time around, with just a little less oil. Next time I would double the tomato and avocado and leave everything else the same. And there will be a next time :-). We served this as a side to the easy mashed potato and roasted vegetable enchiladas (also from this site). It will make nice leftovers for lunch tomorrow, too.

Cranberry and Cilantro Quinoa Salad

I made this salad for a potluck at work, following the directions as written. This worked well for both the vegan and gluten-free co-workers, and it was very good, too! It went over well with the crowd, and many asked for the recipe. I would definitely make this again. I toasted the almonds in the oven for a few minutes. This was easy to prepare.

Quinoa Black Bean Burgers

Oh my! These were the best veggie burgers we have ever had! I was not optimistic since I have tried many recipes before that didn't work, but these were SO GOOD! This was my first time cooking with quinoa. The recipe was simple to make. My husband and picky 7-year old loved them, too! We made them as directed except we grilled them. We will be making these all summer long. Thank you so much for the recipe!!!

Roasted Garlic Cauliflower

This recipe got both of my children (aged 7 and 3) to eat cauliflower. Amazing! My 7-year old actually said "wow. I like this." My husband said that this his favorite cauliflower recipe by far. I followed the directions as written. Can't wait to make this again!!!!

Vegetable Lo Mein

My husband made this for dinner tonight to compliment the Orange-Ginger Tofu Triangles (also from this site). What a nice pairing! This is the kind of food that makes you glad to eat at home : ). We made a few modifications-we used vegetable broth instead of chicken, and omitted the mushrooms and sprouts (substituted more peppers). Both of the kids ate the lo mein (7-years and 3-years). We'll be making this again and again and adding this to our family recipe rotation.
