Coffee Nudge

One of my favorites, but it isn't original. This is a classic called a "Keoke coffee", which I've ordered in bars/restaurants many times. It's a bit of an uncommon recipe, so many bartenders don't know it. Still, I've always liked it better than the more common coffee/liqueur drinks you usually see. Fond memories of sipping one of these on a snowy weekend afternoon in Alaska... Mmmmm...

Sweet and Sour Sauce I

I made it exactly as written, except I substituted agave nectar for the sugar. It set up nicely within the described time, and both my 6yo and I loved it.

Omelet Biscuit Cups

I've made these several times, and they came out awesome each time. We don't eat meat, so instead of the ham I just saute a little onion, green pepper and mushroom in with the eggs. Delicious, and they re-heat well too. I have a countertop convection oven, and from the fridge I pop them in at 300-degrees for about 12 minutes and they're ready to go.

Sandy's Casserole

Delicious. We don't eat meat so we substituted a couple of diced up vegetarian "naked cutlets" from Quorn. I added about a 1/2 cup of frozen peas and used cream of mushroom soup. I bumped up the cheese just a bit, and sprinkled an extra layer on top. After baking about 55 minutes I finished it off under the broiler to brown it. The whole family loved it.

Lemon Scones

The only things I did different than the recipe was to sour the milk with lemon juice as recommended (and the lemon taste was still very minimal) and add poppy seeds. The scones cooked on the outside and remained very dough-y on the inside, like they hadn't cooked at all. Flavor was bland and the texture was awful.
