Brown Rice, Broccoli, Cheese and Walnut Surprise

I give this 5 stars, with a few changes! I doubled the recipe and used 5 small heads of fresh steamed broccoli. I also used garlic-infused olive oil instead of the butter, some sort of low fat cheddar, and left out the walnuts. I cooked 2 cups of uncooked brown rice, and then mixed it with the onion/garlic and broccoli. I then stirred in the salt, pepper, and cheese. I put the whole mixture into a casserole dish and baked it at 350 for about 15 minutes. So delish!!!!.... especially with hot sauce!

This was absolutely delicious! I added baby spinach into the sauce and it turned out to be a great addition. Served with garlic bread on the side.

Spiced Quinoa

MMM this is delicious!! I left out the raisins and chickpeas and it didn't seem to make too much of a difference as some of the other reviews suggested. I used veggie broth instead of chicken it tasted fantastic! If you live in an apartment, this recipe will make the whole building smell of curry!!!!!

Mango-Peach Smoothie

This smoothie is quite delicious and healthy as well. It wasn't as sweet as I had expected, but after a few sips I adjusted to the taste and loved it! It's not that it's not sweet.. because it is.. I think I'm just too used to the overly sugary smoothies from local smoothie joints! If you are looking for something sweet, I would recommend adding in a little bit of honey. I will continue making this as-is.

White Chocolate Raspberry Cheesecake

I cooked this cake for my boyfriend's birthday and it was heaven!!! I followed the recipe is as, and baked the cheese cake in a waterbath (set it on a tray filled with water) to avoid cracking. Definitely recommend.

Baked Lemon Chicken with Mushroom Sauce

I doubled the sauce and it turned out to be the perfect amount. I used veggie broth instead of chicken broth and it was delicious. I took advice from other reviews and salt/peppered the chicken then cut it into 2" pieces and cooked in a skillet. YUM!

The Best Vegetarian Chili in the World

Yummm!!!!! I still have to cook the chili for 10 more minutes but I just taste-tasted it and it is delicious!!! For me, it is the perfect amount of spiciness. I left out the bay leaves and cans of chopped green chile peppers (forgot to buy them) and it tastes just fine. Other than that, I followed the recipe as-is I used Boca meatless crumbles and would recommend them.

Coconut Curry Tofu

This was sooo tasty (and nutritious!). I left out the bok choy because the grocery store I went to didn't have any fresh and I wanted to avoid using the canned kind. Besides that, I followed the recipe as is and served it over brown rice! Can't wait to have leftovers tomorrow

Moroccan Peach Roasted Chicken

I left the rose water out, as another review suggested it wouldn't make a difference. Boy, was that a bad idea! It tasted extremely bland. Don't know how it tastes with the rose water but I felt it wasn't fair for me to give this recipe a lower review since I didn't use all of the ingredients.
