About this Cook
FOOD=LOVE! That sums it up for me. Of course food isn't the only way to express love for those you care about, but it is the tastiest! I was raised by a Southern grandma who didn't love to cook, but taught me so much about food, family, and love. In our chaotic world, what better way to show you care than inviting friends and family to join you at the table for a well-prepared meal you lovingly created just for them, because you cared to take the time. So maybe I should say FOOD=TIME=LOVE. Blessings!
My favorite family cooking traditions
Making our famous family Confetti Salad for every major holiday. Its appearance always marked the arrival of a special day of celebration, as we gathered together in the kitchen the night before to prepare it. Everyone was involved in the washing, chopping and mixing of the much anticipated treat. The following morning it would require the 'first stir,' and of course the first bite, before our family home would fill with loved ones to share our creation, and our special days. Even though we are now scattered around the country, we can be connected knowing what we are all up to on Dec 24th, July 3rd . . .
My cooking tragedies
Incorrectly performing the heimlich on my husband as he choked on a chunk of over-cooked pot roast I prepared early in our marriage. We both still suffer from roast-phobia.

Grilled Salmon I
OMG...what a hit! My first attempt at grilling salmon and it turned out great - made me look like a culinary super-star with the family. Proportionatly increased the marinade to accomidate 2.5 pounds of fish. Grilled it skin side down only over low for about 15-20 minutes after marinating it overnight. YUM YUM YUM!

Lap Salad
This salad was a hit with the entire extended family this weekend. I made it as a side to grilled salmon, with a few adjustments: omitted chicken, added shredded carrots and a 2nd pkg of ramen, used cashews and toasted sesame oil as suggested, and one extra scallion. Everyone's still talking about it today!

Fresh Mint and Cilantro Melon Salad
This made a great side to the grilled salmon I prepared for the family's Sunday supper. I changed it up a bit by adding cantelope and cucumber, and I cut back on the cilantro as a personal preference. Prepared it in the morning for our meal at 4pm.
