Serbian Ground Beef, Veggie, and Potato Bake

I made this last night almost exactly as written (I only had a few strips of red and yellow pepper-no green, I probably used slightly more than a "pinch" of cinnamon and cloves and I put a potato layer in the middle). We thought it was really good. Last night for supper I thought that I had used too much cloves but today the leftovers at lunch tasted perfect. My 3 year old didn't like it but that was not too surprising as he doesn't like a lot of meat. My husband is generally a picky eater and he had seconds.

Chicken Scampi II

Made this as written plus an extra squirt of lemon juice, served over linguine noodles. Delicious! Also had steamed broccoli and ended up mixing the two together on my plate. An easy and fast weeknight recipe-a definite recipe box keeper!

Chicken Pot Pie IX

I have now made this twice without realizing it. I was searching for a chicken pot pie recipe yesterday and just did a search without looking in my recipe box and decided to make this one. When I went to put it in my recipe box today I realized it was already there and I had rated it 4 stars last year. I can't remember what I did last year but I do remember thinking it was a little rich. I said the exact same thing last night while eating it for supper. I do add some poultry seasoning and it may be that I just use too much. Or maybe it is just a rich-tasting dish. Regardless, it does taste very good and is easy to put together. This time I used leftover chicken from one I roasted last week with oranges and rosemary. I added 2 cubed potatoes and doubled the sauce part which ended up filling my pie plate to the brim and having enough to fill a small round Pampered Chef stone dish. I added 1/2 tsp poultry seasoning to my doubled sauce ingredients. I will make again but try tweaking my seasonings just a little; however, the richness did not stop neither my husband nor me from eating 2 helpings :) My 4 year old did not like it but that wasn't terribly surprising.

Easy Batter Fruit Cobbler

I made this exactly as written, using 1 cup fresh peaches and 1 cup fresh blackberries from the farmers' market and we loved it. Super easy/fast to make. Served with vanilla ice cream (the only way to eat fruit cobbler in my opinion :) )

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

This review is primarily for the cooking method and the sauce as I used my own preferred rub recipe. The ribs were very good and very tender and so easy to prepare. I am not generally a recipe tweaker but I did have to leave out the onions, garlic and onion powder due to an allergy of those that were coming for dinner. I thought the sauce was easy to make, mine was reduced in about an hour. Everyone thought it was delicious (it was a little bit too spicy for me but I'll just cut down on the cayenne next time). I had bought a little over 5 pounds of ribs and was worried I had way too much for 4 of us but there was only one little piece leftover. I scaled it to 6 servings which was more than enough sauce for the ribs and plenty for dipping.

Cream Cheese Frosting II

I've made this twice, the first time I didn't tweak the recipe and found it a little tangy for my taste. The second time I added an extra cup of powdered sugar as some other reviewers suggested and it was perfect. I was going to let my son lick the bowl but he got distracted with something so I just took care of that task for him :)

Best Carrot Cake Ever

I have to agree with the name, this was delicious and I can't seem to stop eating it. I didn't change the recipe but I did put my raisins in with the carrots and brown sugar for the 1 hour. I didn't work hard to try to squeeze all of the liquid out of the carrots but just used a spoon to transfer them to the batter along with whatever liquid happened to go in. I used 3, 9-inch round pans (based on some other reviews) and baked for 30 minutes. My cake turned out dense and moist the way I think carrot cake should be. I used the cream cheese frosting II from this site (but added 1 extra cup powdered sugar for sweetness). I made this for my neighbor's birthday and he and his wife each took one bite and said it was an excellent recipe. I can't wait to make this again and plan to offer to bring it for Easter.

World's Best Lasagna

I'm not sure if it is the world's best but it is very good. I doubled the recipe (and followed it exactly) to make one for us and one for a friend who just had a baby (they reported it to be scrumptious). I ended up with about 2 cups extra sauce which I froze and used later for spaghetti. The sauce was a little bit sweet for my taste for spaghetti sauce but I didn't notice it in the lasagna. Overall, very good and since my picky eater husband ate seconds both the first time and when we had it the next day, it will become my new lasagna recipe. Other than the length of time needed to simmer the sauce, I didn't think it took any more time to put together than any other lasagna recipe I've tried.

Apple Banana Cupcakes

I thought these were pretty good. I followed the ingredients exactly and the only thing I did differently was to finely chop the apples instead of shredding. I didn't frost them but have been spreading low-fat cream cheese on them when I eat them for breakfast and that is quite yummy. I have been storing them in a covered container and a few days after making they are extrememly moist which makes it difficult to put the cream cheese on but the flavor is still good.

Apple Crisp II

I followed the recipe exactly and it was delicious. I used what apples I had on hand...a granny smith, some galas, and not sure what the rest were but they were slightly tart. Very good apple crisp.

Rosemary Ranch Chicken Kabobs

These were easy and yummy. I used chicken tenders and didn't make them into kabobs. I followed the rest of the recipe exactly except I used dried rosemary because I didn't have any fresh. I'm sure I will use this recipe many times in the future. I cooked them inside on a grill pan because I didn't feel like messing with the grill and they turned out great.

Baked Brie with Pesto and Pine Nuts

This is delicious and so easy. I couldn't find the seasoning either so I just made pesto sauce from a packet and used some of that. My 2 friends and I ate all of it. I'm making it again for an evening baby shower I'm hosting next week.

Meatball Sandwich

These are great. I've made them twice within the past 2 weeks. Both times I made them as spaghetti and meatballs and then use the leftovers to make meatball sandwiches. I had to leave the garlic and the seasoned crumbs (used plain) out the second time (our neighbors are allergic to garlic and onions) and they were still yummy. This will become my "go to" meatball recipe.

Cherry Poppyseed Twinks

I love these cookies. I made them last year for our annual Christmas cookie baking day and they were a hit. Cookie day is tomorrow and I am looking forward to these cookies. *Update-I have been making these every year since 2004 (I think) for my annual cookie day with my friends because I love them and because they are always requested. I have used all different flavors of jam over the years and they are good no matter what.

Baked Corn

This was very easy and very good. It is called corn pudding where I am at and turned out exactly like corn pudding should. Everyone ate seconds at dinner and we gobbled up the leftovers the next day.

To Die For Blueberry Muffins

Delicious! I followed the recipe pretty much as written except for: used frozen berries, used 3 mini loaf pans because I didn't have a large muffin pan and the second time around I did cut the topping amounts in half and still had some leftover for the pans I was using. This one is a keepr.

Flavorful Beef Stir-Fry

I followed the recipe exactly (used apple juice) and I thought it was pretty good. I might double the sauce next time just because I like lots of sauce for my rice. I used top round steak. I was cooking just for me and it made a lot, but I am happy to have leftovers for lunch and another supper.

Apple Butter Pork Loin

Other than decreasing the cooking time to 90 minutes total as others suggested, I followed the recipe exactly and it was EXCELLENT! I made it as a test run for a dinner party I'm having in a couple of weeks and I will for sure use this recipe. The pork was very tender and the house smelled heavenly.
