Old-Fashioned Lemonade

This is great stuff. I needed fresh lemonade for some "adult" infusions, and this did the job. It also tastes great on its own. Like other reviewers, I boiled some water and sugar to keep the texture smooth. The tip to the roll the lemons first was also fantastic!

Fluffy Pancakes

Potato Latkes I

These turned out much better than my other attempts at latkes, but were a little bland. I made half of the batch as directed, and half with a handful or so of cheddar cheese tossed in. The cheese ones were much, much better than the plain ones. It's a good recipe, though, and I'll probably make them again.

Baingan Bharta (Eggplant Curry)

This was absolutely delicious! I followed most of the directions as written, but had to make one substitution. I couldn't find ginger-garlic paste, so I used a half tablespoon and half teaspoon of minced garlic and a tablespoon of minced ginger in its place. It seemed to work great. The only other suggestion would be to not cook it on high for the ten minutes it's covered. I only cooked it on med-high, and it still burnt to the bottom of the pan. Otherwise, it's a great recipe.

Guacamole

This is the best guacamole I've ever had. I used a whole onion instead of a half, but other than that, I followed the recipe exactly. Amazing. I will definitely make this again.

Lentils And Spinach

I REALLY screwed this up, but it still tasted pretty good. I can't imagine what it would taste like if I hadn't messed it up, but I'm guessing it would be great. (I forgot to turn the heat down when I was simmering it. It got a bit burnt).

Real Hummus

This was pretty good, but the lemon flavor was really strong. I might cut back by a tablespoon next time. I added chopped roasted red pepper, which was also good.

Valentino's Pizza Crust

This was easy to make and turned out pretty well. I used wheat flour instead of all-purpose, and it turned out fine. I also didn't pre-bake it. I just rolled it out really thin and baked it for about 22 minutes. It was pretty okay. I'll make it again.

Healthy Banana Cookies

These were okay. The taste is decent, but not phenomenal. It's good that they are easy to make and don't make a mess, though. If I make them again, I'll probably try chocolate instead of dates. That might help the taste a bit.

Succotash

This was great. I had it over whole wheat linguine noodles as a main dish. I cut the butter in half and only made it in one pan with canned Great Northern beans and frozen corn. Because I used canned beans, I just added them a couple of minutes before I added the corn. Phenomenal.

Ratatouille

Fantastic! I've never had ratatouille before, but I really like the way this tastes. I just cooked all of it on the stove top, so it got a little mushy, but the flavor was excellent. Thanks for a nice recipe!

Spaghetti Sauce II

This sauce is pretty okay. It has a slightly different taste than what I am used to, but it's alright. It's easy to make, which is also a plus, and seems like it would work well in a slow cooker. I feel like it needs something else, though. Salt, maybe?

Vegetarian Bean Curry

This smelled awesome when it was cooking, and tasted pretty great, too. It has an interesting flavor, especially when you get a bite with raisins in it, but it is tasty and delightful. I basically followed the directions, but I did pre-cook the lentils, added an extra teaspoon of cumin, and used more than a "pinch" of cayenne pepper (3 or 4 shakes). I left the lid on when it simmered, so it might have come out a bit thinner than intended. I had it over brown rice. I'll be making this again.

Lentil Curry Soup

This was super awesome. It has an interesting, but very nice, flavor. I'm transitioning to a vegetarian diet, and this is making it easier. :-) That being said, I had to make some changes, partly out of necessity and partly by design. My garlic looked strange, so I had to use garlic powder. I didn't measure...I just shook a ton in. I didn't have 4 stalks of celery, so I substituted a bag of frozen celery, carrot, and onion blend, and then threw in a couple handfuls of onion that I already had chopped. Because I added more vegetables, I added an additional teaspoon of curry powder (I wanted it spicy). I also used brown rice and a mix of green and red lentils (it's habit). Like others, I skipped the blending and left everything whole. Without blending, the potato seems a bit unnecessary, so I might leave it out next time...and I'll definitely be making this again. Thanks for a fantastic recipe!

Boiled Bagels

This was my first time making bagels, and they turned out pretty well. I think they taste a bit salty, so I might cut back a bit next time. I used whole wheat flour instead of the all-purpose flour, and the taste and texture were just fine.

Fra Diavolo Sauce With Pasta

This was quite delightful...better than it smelled. I was kind of worried, actually, because I thought it smelled too tomato-y, but it really wasn't. I did end up adding a lot more red pepper (I started with the single teaspoon...and then probably added another teaspoon or so to the pasta on my plate) and still didn't find it overwhelmingly spicy. I ended up making a few changes. Like others, I used a 28 oz. can of tomatoes. I also used pre-cooked shrimp (because it was on sale) and omitted the parsley (because the store was out). I'd add the parsley in the future, but it doesn't ruin the dish if you can't. It's pretty good stuff.

Banana Banana Bread

This is really good. I didn't change the ingredients, but did make it as muffins (350 for 20 minutes) to save time. They were very moist with a really strong banana flavor. It doesn't taste like the usual banana bread/muffins, but is still quite delightful.

Shrimp Egg Foo Yung

The egg patties were really good, but I thought the sauce tasted odd. I might have put too much pepper in, though. I'll try this again sometime. Edited Later: I tried this again a couple times, and it came out much better. A substitution NOT to make: vegetable broth for the chicken broth. This is one of the few instances where they are not interchangeable (it tastes awful).
