About this Cook
I am an elementary school music teacher, I will be entering my 7th year as a teacher in the fall. I am not married, but live with my wonderful boyfriend whose daughter is with us most of the time. I love to go out to sing karaoke, and listen to music whenever I can. I wish I went hiking and camping more. Oregon is a great place to live, close to everything: beach, mountains, desert, rivers. My favorite place to spend time is Cannon Beach, OR.
My favorite things to cook
Salads, sauces/dressings, chicken dishes, BBQ, Vegetables.....just about anything really. I'm not a very good baker, measuring ingredients isn't my forte.
My favorite family cooking traditions
My mom and grandma and I try to get together a bake Christmas cookies every year. Family BBQ's and Potlucks are my favorite.
My cooking triumphs
I learned to cook when I became vegetarian in college, mostly out of necessity. I did a lot of experimentation with different cuisines and after many trials became a pretty decent cook who didn't need to follow recipes anymore. Even though I eat meat again, learning to use vegetables and seasonings well as a vegetarian made me a better all around chef.
My cooking tragedies
Totally put salt instead of sugar in lemon scones once YUCKY!

Rosemary Ranch Chicken Kabobs
Made exactly as stated, except used 1/3 cup oil. We put some on steak, some on chicken. It was delicious! This recipe is a keeper for sure!

Nutmeg Feather Cake
I made these as cupcakes, and followed the recipe almost exactly as stated except that I used 1 cup of whole wheat flour and 1 cup of all-purpose. They take about 20 minutes instead of 40 as cupcakes. These were for my son's 2nd Birthday party. They were a hit! From my 94 year old grandma to my 15 year old nephew (who had 2 or 3!) The flavor was a nice change from the usual, too-sweet cupcake and they tasted scratch baked, rather than from-the-box. I topped with cream cheese frosting that was store bought because I didn't have time to make any. A really nice recipe: back to basics, nothing flashy or exotic, just plain yummy. Thanks!
