Roasted Squash Soup

This is absolutely GREAT- I can't give this recipe enough praise. I used only spaghetti squash. It wasn't tender at 45 minutes so I flipped it over and broiled for another 5 minutes until it started to caramelize on top. It still wasn't done so I had to finish it in the microwave- another 5 minutes. [I cook a lot of spaghetti squash and have found the easiest way to cook them is leave them whole, pierce a few times with a knife and bake at 350 for and 1 hour. When it's cool enough to handle, cut it in half and scoop out the flesh.] I only had marsala wine and it worked well with this dish. I also added 1/2 tsp turmeric. Can't wait to make this again!

Butternut Squash & Apple Soup

Super soup:) I didn't have Chinese 5 Spice (equal parts ground cinnamon, ground cloves, ground star anise, ground and toasted fennel seeds, and szechuan peppercorns). I used what I had which was the cinnamon, cloves, fennel and ground red pepper (I used ghost pepper- great flavor if you dare!). Also, I didn't have a Granny Smith but used a Pink Lady instead. This recipe is delicious- thank you!

Vegan Caribbean Stew

This was a great dish and I'll make this again! Here are the particualars of what happened in my kitchen. I used Jasmine brown rice. I cut the thick white stems out of the collard greens before I chopped the greens. Never having eaten okra I was a little scared so I threw in about a dozen fresh okra (cut into bite size pieces) and to make up for the difference I threw in about 6 fresh asparagus (cut into bite size pieces). I added about 2-3 cups of water at this point because the stew had very little liquid to simmer for an hour. I waited to add the cilantro until the kidney bean/tomato paste went in. I did not need to use flour because the stew was plenty thick. I said I addded 2-3 cups of water but it may have been 3-4 cups water. This was pretty thick and had NO broth at all. We were able to serve it on our plate instead of a bowl inspite of adding water- of course it didn't matter 'cuz the flavor was so good. One last note, this recipe doesn't call for salt. I added salt and more dill and ginger for more flavor. Great recipe, super healthy and easy to make. I served it with grilled tilapia and steamed broccoli.

Tofu and Plantain Medley Veggie Patties

Amazing recipe! I don't have any experience with plantains but I knew they came either green or yellow so after googling the difference and learning the yellow are a bit more sweet and flavorful that's what I went with. I used extra firm tofu, fresh mushrooms and folded in the bread crumbs with a spatula after processing. There wasn't enough moisture in the recipe to allow it to turn in the food processor so I added about 1/2 cup egg whites and that did the trick. I used vegetable spray rather than butter to cut calories. I cooked my patties a bit longer- maybe 8-10 minutes per side with the lid on the skillet to cook from both sides. They turned out a little crispy on the outside and still tender in the middle. This may be my favorite veggie patty recipe!!

Apple Cinnamon Breakfast Quinoa

I'm always looking for new ways to use healthy quinoa and love this one for breakfast. I substituted the calories from the apple juice for brown sugar:) I used all water to make quinoa and 2 tsp. brown sugar instead of agave. I thought 1 tsp cinnamon might be a little much for this little recipe so I went with 1/2 tsp. Thank you for a nice quinoa breakfast recipe. Next time, I'm gonna try a banana and maybe 1/4 c. blueberries (a staple in my freezer from Costco) combo.

Sweet Potato and Black Bean Chili

This was fantastic! The only changes I made were I used vegetable spray instead of olive oil in both instances and substituted Splenda for sugar. I ended up using about 2 1/2 cups water for my chili. I also roasted, then cooled my sweet potatoes while the rest was simmering on the stove. At the 30 minute mark all was ready to combine, heat through and eat!

Jalapeno Lime Cheesecake

My wife and I liked this, not loved it but liked it a lot. It was fun to make once to say I had a jalapeno cheesecake but it wasn't so terrific that I need to make it again. I will admit tho that I didn't want to make a full 9-in. cheesecake to I taylored this down to fit a 9-in. Keebler graham crust. To do this I used 2 (8 oz) pkg cream cheese, softened, 1/2 cup sugar, 1/2 tst vanilla, 2 eggs, 1/3 cup lime juice and 1 tsp lime zest. I baked at 350 for about 50 minutes or until center was almost set. Thanks for such a creative idea!

Creamy Avocado Cucumber Soup

I was disappinted in this. I love all the ingredients and was excited to make something cool and refreshing. I followed the recipe and it just fell flat for me. I started adding things to give it a little "zing" like white pepper. Sorry but I won't be making this one again (the only reason for the 1 star) but I thought it was a GREAT idea!

Baked Lemon-Basil Pasta

Followed recommendations and added more garlic, spinach, basil and cheese. Also used ff sour cream. This was too tart for my family. I'm going to try this one more time and substitute cream for the sour cream and then simmer to reduce. Also I feel I should have added the basil a minute before the sauce was done. Got overlooked for my taste.

Dynamite Halibut

The flavors were unbelievable. Very sushi-ish which we love as well. The only change I made was I used Ono since I didn't have halibut in the freezer. If I were to change anything up, next time I'll use a nice tuna steak and use only the broiler so it turns out nice and rare. I get intimidated cooking fish when I can't see it cuz I don't want to overcook it. Since the fish was buried in this delicious mushroom mixture I had to go digging to watch the cooking progress. With tuna, rare is better which takes off some pressure there. Thanks for the great recipe! (If by chance the tuna doesn't pan out well, I'll go back to your method!)

Quinoa with Peas

I'm a self admitted tinkerer. Can't leave a recipe alone- mine included. That being said, this recipe is fantastic and here's what I did (no disrespect to the author). I added 4 sprigs fresh thyme ('cuz I had it), 1/2 tsp cumin, 1/2 tsp grnd coriander, cayenne pepper and a few more peas (1 cup). This was a side dish for Baked Falafel and was superb!

Italian Sausage Soup

This was fantastic! I made this using a combination of mild italian sausage, habanero breakfast sausage and chorizo. Also added a bit of chopped onion with the garlic and used 4 cups of mixed fresh greens (instead of 2)that I had- spinach, collard greens and kale. Also added 1/4 cup chopped fresh parsley. I'll just follow up with my wife wasn't going to eat this....I got a text later on that this is one of the best soups she's ever had!

Caribbean Sweet Potato Salad

There was a poster in my doctor's office that showed recommended healthy foods and the sweet potato was on it and I've been looking for recipes that aren't sweet (candied) versions so I was excited to try this recipe. I'll be making this again for sure. I had pastachios on hand so I used them instead of peanuts. I added a touch more cilantro too. Great recipe- I like how all of the flavors pop out as you chew, the onion, cucumber, cilantro. Mmmm. This would be a great side at a bbq. Thanks for the recipe.

My grandma passed down this same recipe minus the baking soda. Ill try adding it next time to see the difference but if you don't have it on hand these are delicious with just the first 3 ingredients!
