Napoleon's Banana Muffin

The taste of these were AMAZING!!! The best banana bread/muffin/cake I have ever made. I didn't have any spiced rum, so I used whiskey and added 1 tsp. vanilla and 1/2 tsp. nutmeg. A lot of other reviewers questioned the amount of sugar and I didn't realize until I was putting it together just how much is in the recipe (1.5 cups white, 2+ cups brown). I am wondering if anyone else's muffins ended up kind of like brown sugar/caramel lava cakes? And I don't know if I over mixed the batter or something, but I had enough for 24 muffins and a small 6"x6" cake.

Parmesan Sage Pork Chops

These turned out to be the juiciest pork chops I have ever made. They were AMAZING! I used 4 boneless chops and doubled the flour mixture. I also added 1/2 t. more of the sage. The only thing I will change for next time is reducing the amount of the parmesan cheese/bread crumb mixture I make--had about half of it left over and hated having to throw it away. I can't imagine how much would have been wasted on two chops like the recipe calls for. :(

Homemade Vegetable Soup

This soup is simple and AMAZING. I ended up using about 2 tsp. of salt and 3/4 basil and 3/4 oregano for seasoning since we aren't big basil fans. I also used regular carrots and canned green beans and added some corn and butter beans, too. (What's veggie soup without corn?) I might add some more beans next time, they kind of disappeared in the mix. I cooked a couple large chicken breasts in a skillet and diced them up and threw them in the pot with the drippings. Tasted great! At the end, I mixed 1/3 cup corn starch and 1/4 cup water and added it to thicken the broth a little--I just don't care for clear broth.

Banana Sour Cream Bread

I only had 3 bananas so I halved the recipe and made 2 standared loaves. Since my Wilton pans are darker, I baked them on 300 degrees for about one hour and 15 minutes. I was planning on keeping one and taking one to work, key word being WAS. After tasting it my loaf, I threw that bad boy in the freezer to keep for myself! The cinnamon sugar mixture on the pan added a sweet, slightly crunchy texture to the outside and the sour cream gives it a little extra richness. This is the banana bread recipe I've been searching for all my life.
