Succulent Grilled Peaches with Honey Chevre

Reviewed: May 10, 2015
Yum!! I prefer feta over chevre so that is what I used and it was wonderful!! Next time I make these will use half honey with half Jack Daniels Tennessee Honey to ratchet up the flavor ;-)

The best way is the Irish way which is equal amounts; especially with Irish Soda Bread or flaky biscuits ;-)

Snow Peas with Water Chestnuts

Reviewed: Oct. 20, 2014
Used toasted sesame seeds and, because I don't care for mint, substituted with fresh cilantro instead. Light and refreshing recipe, thanks!! Note: If you sub with cilantro add it at the end when/if you season with salt and pepper because cilantro doesn't stand up to cooking!

Homemade Lunch Combination

Reviewed: Sep. 6, 2014
Have taken along assorted meat, cheese and cracker 'Lunchables' snacks this way for many years to put together and eat as a meal when away from home but never thought about also adding lettuce and halved cherry tomatoes so I thank you very much for the wonderful idea! :-)

Greek Pasta Salad I

Reviewed: Jun. 24, 2014
The vinegar and oil ratio were not in proper balance and the mushrooms became mushy.

Bacon Wrapped New Potatoes

Reviewed: Jun. 13, 2014
I made a simple change with the Ranch mix which added more Ranch flavor to the potatoes themselves rather than mainly flavoring the bacon. I poked the skins of freshly washed red potatoes really well, sprinkled the Ranch mix to taste directly on the still damp skins so the flavor would soak directly in to the potatoes and then wrapped with the bacon. Thank you for a fun and tasty recipe!

Omelet in a Bag

Reviewed: Apr. 26, 2014
Am giving huge words of caution here regarding using plastic for cooking in boiling water just in case no one else has said something about it here: You must use plastic food bags that clearly state they are approved for boiling not only because of melting points but also because of BPA and other chemicals leaching into the food! There have been several studies regarding this and the FDA requires manufacturers to follow safety standards in order to represent the bags are 'boilable'! Use the same precautions when using plastic for microwaving and baking! With that being said, I love this easy recipe ;-)

Honey Mustard Sauce

Reviewed: Apr. 24, 2014
I followed suggestions using 1/2 cup mayo, 1/4 cup mustard and 1/2 cup honey and that was perfect. Had the amount of too much mayo only been 1/4 or 1/2 cup too much would have probably rated this a 4 but when the ratio is off by an entire 1 cup, well, can only give a 3 star at best...

Sliced Tomatoes with Fresh Herb Dressing

Reviewed: Apr. 23, 2014
Made as written (except did not chill to marinate) and love the combination of these flavors but next time will add a bit of red wine vinegar and use roasted garlic simply because I love their flavors :-) For those who are raw garlic shy/think it is too overpowering I plead with you to try roasted garlic with this recipe - YUM! Also, regarding chilling the tomatoes, please know you can safely marinate them, covered, at room temperature for up to four hours and then chill any leftovers for use in a salad the next day.

Whiskey Marinade

Reviewed: Apr. 16, 2014
Love, love, love!! My only major tweak was to use honey instead of brown sugar because I just don't keep brown sugar on hand. The minor tweak was since I used Jack Daniel's Tennessee Honey Whiskey (my absolute favorite of all time) was to reduce the honey amount by half ;-) Grilled with both boneless skinless chicken thighs and pork tenderloins (two batches of marinade) and will grill top round steak next time :-)

Cucumbers with Sour Cream

Reviewed: Apr. 6, 2014
Using heavy cream didn't sound appealing to use with cucumbers even by my friends who were over for munchies and a movie so in order to not waste too much by way of ingredients I made a 1/2 serving portion of the sauce using heavy cream and another using sour cream for taste testing first. Using sour cream won by a landslide. Thanks for a quick flavorful dressing idea though :-)

Jalapeno Popper Quesadillas

Reviewed: Mar. 22, 2014
Have been making quesadillas with these fillings for quite awhile but I LOVE your idea of buttering the grill sides of the tortillas and adding crushed tortilla chips! Am giving this recipe a four star but only because it's much more complicated than need be. You can simply place all the internal ingredients on one entire tortilla, top with the other tortilla (butter side up) then when time to turn just slide on to the plate you already planned to slice the quesadillas on, turn the skillet upside down over the plate and flip the plate and pan over to slide it back in the skillet and continue cooking the other side. Oh, and using sliced jalapenos from a jar saves the step of broiling the fresh jalapenos should you like to choose ;-)

Chicken Asparagus Roll-Ups

Reviewed: Mar. 18, 2014
Yum, Yum, Yum! I did what others suggested by spreading sauce between the chicken and cheese then coating the roll-ups with more sauce before rolling them in the Panko. I personally don't care for anise flavored anything and almost used parsley instead of the tarragon but decided to be bold in thinking that cilantro would taste wonderful in the Dijon lemon sauce and I was not disappointed :-) If anyone else out there is like me and is not a lover of breasts please know that using boneless skinless thighs works wonderfully too! Thank you for a great tasting simple recipe, Monica!

Original Blue Cheese Coleslaw

Reviewed: Mar. 17, 2014
A really refreshing change from standard coleslaw dressing! Instead of using the crumbled blue cheese and mayonnaise I simply used my favorite Marie's Chunky Blue Cheese brand salad dressing in a jar (found in the produce section) to coat the shredded cabbage and then added the fresh lemon juice and salt and pepper to taste. I love your idea of the addition of celery and green onions, too! Was going to give your recipe a five star but am giving it a four because of the error amount of 6 'stalks' of celery instead of 6 'ribs'. ;-)
