Taco Seasoning I

What makes this recipe exceptional is the fact that it does not have MSG, sugar or artificial flavorings. This is a perfectly flavored recipe. I used the entire quantity for one pound of ground beef, we like our tacos spicy. Very delicious. I will use this recipe from now on instead of the prepackaged mix.

Breaded Chicken Fingers

Yum! I followed the recipe as written except I used fresh garlic instead of the powdered garlic. The chicken was delicious! Next time, I will use only the egg whites, not the yolks in the marinade. I will also dredge the chicken in the flour& bread crumb mixture because the moistened chicken wanted to stick together in the plastic bag and did not get coated completely. My grandkids will love this recipe!

Watermelon Summer Salad

This recipe was the hit of the 4th of July picnic! Everyone commented on how delicious it was and every bit of it was eaten! I used lemon juice because I did not have lime, kalamata olives because I did not have canned black olives, and fresh sweet vidalia onions because they are my favorite. I liked the saltyness of the kalamatas. I will make it over and over!

BBQ Country Style Ribs

I followed the ingredients and cooking times as written. I asked our butcher to select the best ribs..... ribs that he would take home to cook. The lemon imparts the perfect flavor (not to strong) into the ribs. I liked the mild garlic flavor, too. I covered the ribs for the first two hours, then uncovered them for the last hour. These were the BEST and EASIEST ribs I have ever made. I will throw away all the other recipes that I have and just use this one from now on. Bravo to Coolundrprsr!

Big Al's K.C. Bar-B-Q Sauce

This recipe makes enough sauce for at least a dozen big meaty ribs, more if you don't drench the ribs in the sauce. I left out the Hickory liquid smoke because I do not like the flavor of it at all. I really liked the end result, it was perfectly spicey and gloppy:). We do not care for overly sweet tasting BBQ sauces...this recipe was just right.

Pasta e Olio

This recipe is a version of the classic Italian dish called "Aglio e Olio". The authentic version does not call for parsley or butter, but just the one quarter cup of olive oil. Be VERY careful not to brown the garlic or it will turn the entire quarter cup of olive oil into a bitter unsavory oil and spoil the entire dish. This dish was meant to be a simple yet delicious first course, not a main course. As always, save some of the cooking liquid to moisten the dish if it is to dry. It's easy to add your own personal touch to it by adding anchovies, parsley butter or meat. Thanks for sharing such a great recipe!

Emily's Chipotle Chili

This is the best chili that I have ever made! I changed to one pound of beef, but chose to use tenderloin cut into small cubes instead of the ground beef. I used home made hot sausage from our local Brazilian market. I couldn't find the adobo sauce, so I used dried chille chipotle from the Brazilian market. I added the cup of water recommended by my version came out a little runny, so I added a teaspoon of corn meal to thicken it. Emily's recipe is a winner!! I just tweaked it to suite the ingredients that I could buy locally. Can't wait to eat the leftovers! Thank you Emily for the wonderful recipe!
