Skillet Corn Bread
Minor tweaking for perfect cornbread. I'm a transplant to the south and understand cornbread is NOT supposed to be sweet but I snuck two tablespoons of sugar and used bacon grease (yes I did) for the vegetable oil. It came out PERFECT with the expected crisp bottom! Our friends father in Alabama made it that way for decades so I followed his lead and it is wonderful! Saving this to my recipe box!

Roast Chicken with Rosemary
BEST CHICKEN EVER!!! Since it was just my husband & me for thanksgiving we picked up a 4.5lb fryer. I did not have fresh rosemary so I used dried and only other change was I applied bits of butter on the skin which rendered the most delicious skin! The onion keeps the cavity so moist the meat fell from the bones and was delectable! I found letting the bird rest while covered was another good move! Can't wait to make the next one! SIMPLE and DELICIOUS!

Strawberry Shortcakes
Happy to be the first one to rate this recipe! Was making a dessert for a diabetic friend and substituted 1 tblsp of Stevia for sugar in cake mix and 1/4 cup of stevia for strawberries (otherwise too sweet). Used (I pretty much always use honey for my whipped cream) Tupelo Honey (safe for people watching their sugar) and placed cakes in ramekins for easy transport. This is an awesome shortcake recipe (despite the substitutions), I'll try it using sugar next time and I know it will be even better! Thanks Divinity! 4 hrs later - neighbors LOVED this dessert...we were already stuffed after a delicious steak dinner YET they devoured it! (I was smiling!)
