Lemon Bread

Good recipe for a basic lemon bread. I did however, change a number of things. First, since I wanted my bread more lemony and less milky, I added 1/3 cups of lemon juice and reduced the milk to 1/8 cups + 1 tbsp. To make the bread more fluffy, I added 1/8 of a tbsp of vinegar to the milk and also added 1/4 tsp of baking soda. I added the lemon juice right after I added the eggs. The texture was lovely! I put only 1/4 cup sugar and it was too sour for my liking, so I'd increase the amount of sugar the next time round. Also, I took the bread out of the oven and glazed it 15 mins before the cooking time ended (I cooked it for about 40 mins), and placed it back it, so it'll have time to dry a little. I will definitely be making this again!

Orange Muffins

This is a good recipe! However, instead of melted butter, I creamed the butter so that it would be a more cake-like muffin. Other than that, I did put most of the 2/3 orange juice and to make it more moist and fluffy, I added some buttermilk to the recipe (or milk + a bit of vinegar/lemon juice). I also added 1/4 chopped raisins and 1/4 chopped almonds and sprinkled some flour over them before mixing into the batter so they won't sink to the bottom. I made it as a gift and my aunt simply loved them! :) Thanks for the recipe!

Pumpkin Oat Bread

This is actually a very yummy bread! However, I found it a little densed. I don't know if it's something I did, but it was a little tough to cut into (but very moist on the inside which was good!). I love the taste and I will definitely make it again, probably increasing the leavening agent. Thank you so much for this recipe!

Cinnamon Carrot Bread

After reading all the reviews, I reduced the flour to 1 and a 1/2 cup, increased the carrots to 1 and 1/2 cups. Also, I realized that the batter was a tad dry, so I added 1 tbsp and 1 tsp of milk to moisten it. I baked it around 30 mins, and it was baked just right!

Pumpkin Muffins II

This was just beautiful! I made it into a loaf, and substitute the oil with butter since I do not like the smell and taste of oil (I creamed the butter), and they were soo fragrant and delicious! I will definitely be keeping this one! Thanks!

Apple Nut Bread

I love this recipe! I'm always making apple quick breads but this is the first time I used grated apples and they were great! I did not put in the nuts and I added more apple and baked them for 40 mins.. they were perfect. Thank you!

Oatmeal Cake II

First off, I was never an oatmeal lover. However, since I had oatmeal in abundance, I decided to try this cake. What a pleasant pleasant surprise! The cake was moist and delicious, and it was really easy! I love it! And I will definitely be using oatmeal more in my cakes. Thank you!

Rich Mocha Cake

This cake was surprising! The batter was very thin, the thinnest I have ever seen, so I was a little skeptical about how it'd turn out. It came out a little shriveled in the middle but it was really moist and light! Great recipe! It's a keeper!

Apple Cake I

OMG this is sooo good! Very easy, and I just used one mixing bowl! When I saw the batter, I was afraid that it was going to be dry, but it was very moist! I did, however, lessen the amount of oil to 1/3 cup, the sugar to 1/2 cup and cinnamon to 1/2 tsp.. it came out perfect! :) Thank you!

One Bowl Chocolate Cake II

This cake is easy to make, however, somehow I found my cake to crack and sink a little. But other than that, my mom simply loved it and I'd definitely stick to this recipe from now on!
