Spinach Stuffed Chicken Breasts

Uncle Mac's Peanut Butter and Jelly Cookies

I made these twice because my husband finished the first batch in 1 days! The flavor is amazing and all in the quality of the PB you buy! After reading other's suggestions I agree that you should not press them down too much or make the jelly hole too deep so the jelly doesn't come through the bottom. Also, I mixed the jelly the second time, rather than just scooping it our of the jar and it had a better texture... stickier. The only thing I did different was bake for 15 minutes. The first time I baked for 10 minutes and the cookies were fudgy, but too crumbly. At 15 minutes they are still soft and hold together much better. These will be a regular in my house!

Chocolate Meringue Cookies

AMAZING! I made these for my gluten free husband and I wasn't expecting to love them because, in general, I'm not a huge fan of meringue, but OMG! The outside shell was light and crunchy and the inside was fluffly and chocolatey... Delicious! The only things I did differently (because I'm a chocoholic) is add a slightly larger amount of cocoa powder and 50% more chocolate chips!

Good Old Fashioned Pancakes

Great pancake! Very flluffy! It tasted even better after my fiance (the "chef") explained how you know when the pancake is ready for flipping: when the batter of the uncooked side starts to bubble.

BAKER'S® ONE BOWL Coconut Macaroons

This is the kind of macaroon I like. I followed the recipe exactly, it's the same as the recipe on the Baker's coconut package. I dipped 1/2 of each macaroon in chocolate and it was a huge hit at my niece's birthday party (both with the kids and adults)

This review may be unfair because there are so many different ways of making these cookies. The condensed milk gave this cookie a strange texture. I prefer the Baker's recipe.

Amazing Whole Wheat Pizza Crust

This was my first attempt at pizza and (not to toot my own horn) but it was good! Great recipe! I've made this pizza 4 times in 2 weeks. I've made both the thin crust and thick crust. I didn't change anything about the recipe except following some other reviewers' advise by cooking it for 5 min at 500, then 15-20 min at 425. It's good if I bake the pizza on the same day and if I prepare the dough the night before. After shaping the pizza, I let it sit for 10 min (for fresh dough) or 15 min (for refrigerated dough) to let it rise again so that it's light. The thin crust is good and the thick crust is even better, it was very light and just melted in your mouth. And it didn't have that grainy kind of whole wheat taste.

Icebox Sugar Cookies

Good soft cookie. Because of the ingredients I had available I used 1 cup of light brown sugar and 1 cup of Splenda. I normally like VERY sweet cookies. These weren't too sweet, but that just means that I can eat more of them! Fiance liked them also (and he's SUPER picky)!

Russian Potato Salad

I'm Russian and my mom's version of this recipe is a little different. To the same qty of eggs/potatoes, she uses only 1/2 lb bologne for everyday OR chicken for holidays. She uses 4 pickles and 1 fresh cucumber. She doesn't use onions. She recommends using mayo to taste and dill if you want to. As for technique... my mom's advice to me was to peel the potatoes before coking them. That way... you don't burn your fingers trying to peel them (or waste time waiting for them to cool). Enjoy! My b/f and his family (who aren't Russian) LOVE this recipe... they all asked for it!
