Chef John's Baked Mushroom Risotto
Just wonderful...absolutely loved it! Didn't deviate too much from the recipe; substituted light cream for the whipping cream and used arborio rice. Cooked in a cast iron frying pan. It didn't need the 2 tbsps. of cream at the end and I didn't have chives. Turned out better than any risotto I have ever made before and so much easier. I will be making again and sharing the recipe with others. Thanks so much Chef John!

The Best Zucchini Fritters Ever
I used oil instead of shortening and substituted Parmesan for Romano, otherwise I made them exactly as stated and they were great! I might try green onions next time. Thanks!

Ultimate Twice Baked Potatoes
I have often used the Garlic Baked Potatoes recipe from this site so I baked 2 huge Russet potatoes using this method. I cut down on the milk as suggested by another user and only added enough to reach the right consistency. I used Hormel Real Bacon bits and ready shredded nacho cheddar cheese. We ate it as the main course because our potatoes were so big and we loved it so much that we fought over the single leftover half for breakfast! Thank you!
