Grilled Salmon I
Made tonight and it was good. I made the Yummy Honey Mustard Dipping Sauce from this site to go with sweet potato fries I was serving with the salmon. The sauce was excellent with the salmon and took it up a notch so you have something to dip the salmon in. Five of us loved it, and we all used the sauce with the salmon.

Best Ever Party Appetizer
Made this for the first time last week and took the recommendation of putting all ingredients in a food processer then mixing with the goat cheese. This was good as an appetizer with toasted appetizer size bread slices. HOWEVER, I HIGHLY RECOMMEND PUTTING THIS ON THE NEXT BATCH OF WHITE FISH YOU ARE GRILLING! Brought my left overs to a friends house and he surprised me by adding the spread to the top of the fish. The flavor was to die for, high restaurant quality. Grill fish on one side using your favorite seasoning, then flip and add this spread to the top of the fish with a little cheddar sprinkled on top to hold in place. He used mahi but it would be good with any white fish. Actually like it better on the fish than as an appetizer! Try it, you'll like it!

Make-Ahead Mashed Potatoes
Made this for the holiday a day before and it turned out great. I like my mashed potatoes creamy so I used all the ingredients as listed and added four tablespoons unsalted butter. After spreading in a greased baking dish, I then drizzled two tablespoons of melted butter on top and sprinkled with paprika. Refrigerated 24 hours then brought to room temperature (about an hour)and baked 30 minutes at 350 degrees with aluminum foil on top then took foil off and baked an additional 20 minutes. Came out delicious and shows nice too. Perfect for making ahead of time.
