Homemade Flour Tortillas
Awesome flavor. My family won't eat grocery store tortillas again. The stand mixer with the dough blade works like magic on this dough. I just plopped all the ingredients in the bowl (no premixing) & turned the machine on. No sticky hands....or bowls. I used (unflavored) coconut oil instead of lard. I also used coconut oil to lightly oil the pan. Helped the tortilla get those large brown burn spots. My only complaint is that by the time I got 1/2 - 3/4 the way thru the tortillas, my house was filled with smoke from the burning flour. It happened the 1st time I made this & I used a dry pan that time, so I think it was burning flour. Had to open windows & turn on the fan to prevent the smoke alarms from going off. I had no problem separating this recipe into 24 balls & getting 8" roundish tortillas out of each one. It does take some patience & determination with a rolling pin. Each one was unique! I don't have a tortilla warmer, so had to improvise with a technique I read about a while back. I used damp kitchen towels on a plate. Each time a tortilla was done, I'd put it between the soggy layers to soften the tortillas up while they sat. Kept them moist & warm.
