Beef Enchiladas II

Really quick, good base recipe; I added red pepper flakes and garnished with sour cream, guac, cilantro and green onions. For the purists that want corn tortillas, give it a try with the flour ones- I only had flour on hand and didn't have a choice (nearest grocery store is 45 minutes away), but glad I tried this!

Carrot Soup

Made this per the recipe-it was good, but like a few other reviewers, thought it was missing something. I added (1/2 c) milk as another reviewer's husband suggested, and it was really good! Will make this again. The butter in the recipe does make it rich, but I'm a butter lover!

Old Fashioned Onion Rings

Made these today and they were so good! Like many, I used Panko breadcrumbs and the rings had a great texture. Did them in batches and held the ready ones in a 225 oven and they stayed hot and crunchy. Served them with spicy ketchup (3 parts ketchup and 1 part Sriracha sauce) YUM!

Black Pepper Beef and Cabbage Stir Fry

Nice, easy dish to make. I served it over Jasmine rice and topped with Sriracha hot sauce (it was a little bland but I like spicy food- get your hot sauce out if you are like me). Next time, I'll try a little sesame oil and maybe some Oyster sauce or the spiciness of fresh ginger might be nice.

Mexican Rice II

Good basic recipe; I didn't have tomato sauce, but used a 14.5 oz can of diced tomatoes (juice and all) and only 1 cup of chicken broth- turned out great! Rice did not puff but I did brown until golden. 25 minutes was the perfect cook time.

I ate this same dish (minus the sesame seeds) growing up...still LOVE IT- very simple but tasty. Holly T- you can order dashi granules online from Amazon if you can't find them in your ethnic store (never seen it in regular supermarkets).

Lebanese Chicken and Potatoes

Good basic recipe; I made as written, but next time will add the cumin as others recommended. I did add a can of drained artichokes the last 10 minutes of cooking and it made a nice 1 pan meal!

Sopapilla Cheesecake Pie

So easy and so good! I halved the recipe (since it's only 2 of us) but now I wish I would have made the full recipe. Couldn't wait for it to cool and just ate my 1st piece fresh out of the oven- YUM! Thanks for a great recipe!

Eggplant Croquettes

Really good; I made as written and I think this is a kid friendly recipe- not spicy at all...tastes a little like eggplant parm. I'll add red pepper flakes next time and make a spicy dipping sauce (no kids in this house!).

Caramelized Baked Chicken

Easy and tasty...I made dish as written but will probably sprinkle a little brown sugar on top the last 15 min of baking, to make a thicker glaze next time. Adding red pepper flakes would be a great addition next time too.

King Ranch Chicken Casserole I

Great recipe you can tweek to you liking. I added a bell pepper that I sauteed with the onion, and also used corn tortillas rather than chips. So good with sour cream or sliced avocados!
