About this Cook
I am a special education teacher in NYC. I have been married for a little over a year and a half to my wonderful husband. I enjoy cooking and collecting cute kitchen gadgets. :)
My favorite things to cook
I enjoy Italian and Spanish cuisine and I really love baking.
My cooking triumphs
Rice and beans, lasagna, chili and roasted chicken
My cooking tragedies
garden pasta (too oily!), beef stew (missing flavor!)

Apple Crisp II
This tasted like the filling of an apple pie. I even got my husband to eat some which is a big deal in this house. I put half the amount of flour and white sugar and used only about 6 apples. I added a tsp of water in the apple/sugar mixture and then halfway during baking I poured water over the top, just enough to wet the crumbles on top. I baked it in a small convection oven so it worked well. I will definitely be making this again in a larger oven.

Chicken Parmigiana
Very straightforward recipe. Came out delicious, just make sure you get a tasty sauce, the one I used didn't seem to have enough flavor for me.

Roasted Garlic Bread
Made this for dinner tonight and it turned out delicious. Instead of using Italian or French bread I brought smaller hero rolls because it's only me and my husband. They still came out great and I will definitely make them again.
