Yummy Sweet Potato Casserole

I followed the suggestions from Melissa's reviews and cut the sugar, doubled the vanilla and topping mixture and added cinnamon, clove and nutmeg. I could eat this as my dessert - no need for pumpkin or pecan pie!

Better Than Sex Cake II

This cake is delicious but the sweetened condensed milk is not necessary- I have never used it on my cake and it is always a crowd pleaser. We call it "Darn Good Cake" in my family.

Caramel Bars

Based on reviews from others, I doubled the oats, flour and baking soda. I increased the brown sugar to 1 cup (thought doubling that would be too sweet). I stuck with the 3/4 cup of butter as the recipe says. I found that this made for too much crust which overpowered the caramel, chocolate, walnut mixture (I made this "fillling" as recipe states). Next time I will make 1.5 of the recipe for the "crust" and use the whole bag of the caramels (50 caramels), and possibly reduce the amount of chocolate chips as I also found those to be a bit overpowering. Also, I used half whole wheat flour. DEFINITELY bake in a foil lined pan and DO NOT attempt to cut until cooled.

Oatmeal Peanut Butter Cookies

These are excellent, chewy cookies! I made them with the following changes: 1 cup of butter instead of shortening and margerine, 1/2 whole wheat flour and 1/2 all purpose flour, 1.5 cups of oats, chocolate chips, and walnuts. VERY GOOD!!

Whole Wheat Blueberry Pancakes

I love whole wheat and choose it anytime it is an option. However, these tasted like paper with blueberries to me. I don't know if I did something wrong or if that is how they are supposed to taste. I did make my own syrup to go with them (1/2 cup of honey, 1/4 cup of butter and about a tsp of cinnamon melted together). It was DELICIOUS and made these the best tasting blueberry paper I have ever had! Sort of defeats the "healthy" aspect of the pancakes but when you are looking to treat yourself definitely try this!

Classic Tiramisu

I only used 1 cup mascarpone instead of 1 and a ¼ b/c that is how it was packaged at the store. I also made my own lady fingers using the "lady fingers" recipe from this site. (they were eggy by themselves, but once in the dessert, not eggy AT ALL). I added about a ½ teaspoon vanilla to the whipped cream b/c that is how I have always made whipped cream. I didn’t have coffee liqueur so I made my own concoction of what I had on hand. I used a combination of Jamaican Rum Cream, Crème De Cacao and strongly brewed coffee. I also soaked my lady fingers for about 5 seconds in this mixture instead of brushing them. The liquor flavor really added a nice flavor to the dessert. I also dusted heavily with unsweetened cocoa (instead of just using a teaspoon). My husband LOVED this dessert!!!

Ladyfingers

While I was sifting my flour, I put the eggs into the refrigerator to avoid the batter becoming too warm and spreading. However, the taste of the finished product was VERY eggy. Hopefully once they are combined with rest of the layers in the tiramisu the egg flavor will be lost.

Mound Bars

DELICIOUS!!! I did not add sugar to the graham cracker crumbs. I found that I needed a little more than 2 cups of coconut. Before spreading the chocolate on, I sprinkled on some toasted almonds. I also used a mixture of hershey's milk chocolate bars and hershey's special dark and scored the chocolate so that it would be easier to cut later. I will definitely make these again!!

Peanut Butter Banana Muffins

As suggested by others, I increased the amount of banana and peanut butter (2 bananas and 1 cup pb). Also, I used 1/2 cup of all purpose flour and 1/2 a cup of whole wheat flour and white sugar instead of brown b/c that is what I had. The peanut butter and banana flavor was definitely there but these muffins still need something- perhaps a 1/2 tsp. of salt??? I also omitted the topping just to cut calories. I will definitely try these again with the salt.

Iced Pumpkin Cookies

These cookies are fantastic! I have made them several times and found that it works best to cut back on the flour by 1/4 to 1/2 cup and add more spices. I'm not an icing person so I usually omit that part.

Too Much Chocolate Cake

Very rich and moist! I have also tried this with red velvet cake mix, chocolate pudding, and no chocolate chips. It was the best red velvet cake I've ever had!! I used the whipped cream cheese frosting from this website which is also DELICIOUS!!
