Mom's Zucchini Bread

I have made this recipe every weekend and finally nailed it today!!..Here goes..instead of 2 1/2 cups of sugar, I used one cup of white, one cup of brown. Instead of 3 eggs, I used 4 duck eggs (everything is fluffier), instead of chopped nuts, I used 1/2 cup of shredded sweetened coconut and reduced the cinnamon to two teaspoons and increased the vanilla to four teaspoons. I baked it for 40 minutes at 325. DELICIOUS!
