Pan Seared Salmon I

A great, simple recipe that can be modified for your own preferences. I like to season my salmon with garlic powder, pepper, and lemon juice prior to frying. I add the oil to the pan rather than the salmon and cook over medium-high heat for 3 minutes on each side. With this method the salmon will be slightly translucent in the center. I add the capers for the last minute of cooking. I like to serve this over salad with tomatoes, onion, kalamata olives, avocado, feta cheese, and champagne vinaigrette dressing.

Crusted Salmon with Honey-Mustard Sauce

This was a tasty dish mainly because of the honey mustard dressing. However, I didn't think the bread crumb coating added much to the dish. Next time I will probably skip this step. I will also double the amount of honey used in the dressing.

American Lasagna

***This review is for my VEGETARIAN version*** I made this vegetarian by subbing one 8oz package of Smart Ground protein crumbles for the 1.5 pounds of ground beef. It turned out to be just the right amount of "meat" in my opinion. I used 1.5 onions rather than 1 and doubled the basil, oregano, and garlic. I also added one teaspoon of cayenne pepper which added just the perfect amount of spice. I did NOT think this needed more sauce. This could be because I simmered my sauce at a low temperature and added about a half a cup of water half way through. As others have stated, 9 lasagna noodles was perfect. I covered with foil and baked for an hour, then removed foil and baked for another 20 min. Summary: As lasagnas go, this turned out to be very good! I will make this again.

Wonderful Fried Fish Tacos

I used tilapia to make my fish tacos and they were delicious. I made my own simple tartar sauce (mayo, relish, lemon juice) and added chili powder to the mixture. I also sprinkled a bit of Rose's lime juice on each taco which ended up being a great addition. Definitely try it!

Double Layer Pumpkin Cheesecake

Absolutely delicious! I used a 9 in premade regular pie crust. I folded in 1/4 cup of sour cream after adding the eggs and doubled the amount of cinnamon, vanilla, and nutmeg. I baked mine on top of a cookie sheet with a bit of water in the bottom to prevent cracking. Also, I let my pie cool in the oven with the door open for about half an hour before removing from the oven. I then cooled it for an hour or so on the kitchen counter before refridgerating. I had no cracks but when I went to try a piece exactly 3 hours after I put it in the fridge, it was still slightly warm. You will need to refridgerate for at least 4-5 hours before its the perfect temperature to dig in. I topped mine with store-bought caramel sauce and whipped cream - yum!!!!

Swordfish a la Siciliana

Delicious! I marinated my steaks for 24 hours with 1/3 cup white wine, 1/4 cup lemon juice, 2 tablespoons soy sauce, and 2 tablespoons olive oil. For the sauce, I doubled the garlic and never set my burner higher than medium. I cooked my swordfish steaks for 30 minutes because they were about 2 1/2 inches thick. They came out perfect. I served this over garlic mashed potatoes with asparagus with hollandaise sauce on the side. My boyfriend said this was the best meal he has had in years!

Grandma's Banana Bread

So delicious! Moist and sweet! Just like I like it. I followed the recipe exactly. This was my first time making banana bread and I will not be trying any other recipes! The only thing I will do differently is to add nuts when I add the bananas. Yum!

Four Cheese Margherita Pizza

My new favorite pizza! I made a few adjustments based on what I already had in my cupboard. I halved the recipe to feed 3 people. I used a full 8 ounce package of a 6-cheese italian blend instead of the mozzarella and fontina cheeses. I also used a heavy sprinkling of basil leaves from my spice rack rather than fresh basil leaves. I had four roma tomatoes available but I sliced them thin so I couldn't even fit 3 on my pizza. I am going to use the remaining sliced tomatoes that are already covered with garlic and oil to make bruschetta tonight (I will also use the leftover cheeses from the pizza). I followed someone else recommendation of broiling (only for about a minute and a half) after I baked for 10 minutes. This made the pizza a little crispier than I prefer. I think if my pizza crust was thicker, this would have worked better. Still, it was delicious!!!!

Tuna Noodle Casserole from Scratch

Great recipe! I was a little worried there would be too many mushrooms but it was the perfect amount. I really prefer the homemade sauce rather than cream of mushroom soup. As far as tuna casseroles go, this is a winner!

Father-in-Law's Scallops with Sun-Dried Tomatoes and Bacon

I gave this four stars so I wouldn't hurt the overall rating because of my changes. However, I would like to leave a review for the pescatarians that may be considering making this dish. I left out the bacon and sprinkled just a little bit of vegetarian bacon bits on the dish at the end. I used diced sundried tomatoes which gave the flavor but hurt the texture a bit. Overall, I would give this 3 stars for a pescatarian meal because it lacked flavor. My boyfriend did enjoy this dish but I doubt I will make it again. If I do, I will have to make some major modifications and will probably not use the bacon bits.

Clams Kokkinisto

I thought this was EXCELLENT considering how easy it was. Very few dishes that use canned ingredients will have such a lovely flavor. I used two 6.5 oz cans of chopped clams (undrained) and two 6.5 oz cans of chopped clams (drained). I only used chopped because I already had these on hand. I don't think this hurt the dish but I will try whole clams next time. I also used 6 cloves of garlic instead of four. As suggested, I topped each plate with feta and served over angel hair pasta. The feta is a MUST. Thanks for the great recipe!

Flourless Peanut Butter Cookies

So delicious and easy! I followed the advise of others and used 1/4 cup white sugar and 1/2 cup brown sugar and they came out perfect! As others have mentioned, make sure you eat these with a glass of milk!

Shrimp Gazpacho

Delicious!!!! I added 2 tablespoons of worcestershire sauce and celery salt and cayenne pepper to taste. Makes for a perfect lunch or even an appetizer when served in small portions.

Pesto and Pasta with Lemon and Shrimp

The only change I made to this recipe was cooking my own linguini rather than using the pre-cooked Buitoni linguini. I thought the meal was very boring. The only positive is that this meal is super easy. I used medium peeled cooked shrimp from a bag and I think thats where the recipe goes wrong. I would recommend that you cook and season your own shrimp. Some sort of lemon garlic mixture would be good. Either way, I would not recommend this recipe as is.

Blackened Tuna Steaks with Mango Salsa

This is my all-time favorite recipe. First of all, the seasoning is AMAZING. I use this every time I sear tuna. Second of all, the salsa is AMAZING and a perfect compliment to the tuna. If you buy store bought mango salsa, you are missing out. DOUBLE the salsa because you will want extra. Third of all, 3 minutes on each side will make two inch thick tuna come out medium. I cook my sushi-grade tuna for one and a half minutes on each side. I usually serve this with corn and rice. Love it!
