Inside-Out Manicotti

This was exactly as promised: all the flavor of manicotti, but not as much work. I did think the nutmeg flavor was fairly strong as written, but since we like nutmeg that wasn't a problem. If you don't want that flavor to be as prominent, I would cut the amount down. Everyone at my house liked it, and I would definitely make it again.

Easy and Delicious Slow Cooker Cassoulet

I didn't find the flavors here particularly exciting, but I did think it was good (and easy, as promised). My husband liked it a lot, and my two-year-old was pretty happy with it, too--especially the turkey bacon.

Reuben Dip

Delicious! I had tried a friend's recipe for Reuben Dip and I have to confess that it was slightly better than this version, but since I don't have her recipe, this was the next best thing.

Massachusetts Straub Chili

This was good, although not terribly memorable as far as chilis go. Admittedly, I didn't add the stew beef (I used only ground beef) but I don't think that would have altered the flavor profile substantially, just the texture. I'd make it again, but I also plan to keep experimenting and searching.

Breaded Chicken Limone

Some of the reviews of this dish sort of baffle me. It's called breaded chicken LIMONE. To me, that is a sign that the lemon flavor will be prominent. In fact, I wanted an even more prominent flavor so I upped the lemon juice slightly and cut all but a small pinch of the sugar (as other reviewers suggested). With those very minor tweaks, I thought this was a great way to use up half a bag of frozen brussels sprouts that has been lingering in my freezer for ages. My husband can be skeptical of dishes where veggies are prominent, especially when the veggies are brussels sprouts, but even he liked this. And the two-year-old at least tasted the sauce (and liked the breaded chicken). I'd definitely make this again, it's a good winter dish.

Chocolate Zucchini Bread I

I made this bread for a party and it was a huge hit. Everyone was asking for the recipe. Bonus: if I slice it up my child thinks he is eating a brownie, and while I wouldn't exactly call this a healthy recipe, with the zucchini in it I feel like it's at least slightly better for him than other sweets. Great way to use up the inside of a hollowed-out zucchini after making stuffed zucchini.

Taco Lasagna

My husband and I really enjoyed this, and it wasn't terribly time-consuming to prepare for something with the word "lasagna" in the name. We made it with a mild salsa in the hopes that our toddler would enjoy it as well. Unfortunately, this is only a 3 star recipe for our family because even though it contains a bunch of his favorite things (cheese, tortillas, ground beef) he wasn't that interested in eating them in such a mixed up combination. Oh well!

Ham and Broccoli Quiche

This was my second quiche in as many weeks as I am trying to use up the last of my leftover frozen Christmas ham. It was incredibly easy to prepare and went over well with my husband. My son was less enthusiastic, eating the crust and picking out the ham to eat but leaving all of the eggs and broccoli. Overall I think I prefer spinach to broccoli in my quiche, but this was also an interesting way to use up frozen broccoli.

Stuffed Zucchini with Chicken Sausage

My husband and I thought this was really good. However, I added the full amount of crushed red pepper called for and found it to be almost too spicy for me (and I like a lot of spice) and definitely too spicy for my two-year-old. I'd make this again but will cut back on the red pepper next time.

Rice Lasagna

This was great! All the flavors of lasagna but none of the hassle. My toddler gobbled it up. I still prefer the real thing, of course, but this is a yummy way to use up the half bag of rice that always seems to be lurking in my cupboard.
