Addictive Double Chocolate Mint Cookies

These were wonderful! Better than Girl Scout cookies. The amount of mint was just perfect, not too much, not too little. The dough did seem a little too soft, so I added another 1/2 of flour, or enough so that the dough had the consistency of chocolate chip cookie dough. I used a 1 inch scoop which made perfect, round cookies (About sixty of them), and they were light, buttery, and crisp on the edges while still managing to be chewy on the inside. They had the perfect thickness- not too flat. Perfection!!!

Good Old Fashioned Pancakes

These were some of the best pancakes I have ever made! I made a few minor changes: I cut the salt in half, warmed the milk before adding it, and added cinnamon, nutmeg, ginger, and vanilla to spice it up. I made a quadruple batch, and we will be eating these for the next week!

Homemade Maple Syrup

This recipe is amazing! Quick and simple with phenomenal results. It has just the perfect consistency: not too runny, not too thick. I added some vanilla extract along the the maple. Will definitely use it again.

Homesteader Cornbread

I loved this recipe! It was the tastiest and simplest cornbread ever. As with all quick breads, do not mix it too much. Once its combined, leave it. It only took 25 minutes for mine to cook.

To Die For Blueberry Muffins

I love this recipe! I use whole wheat flour for half of the flour, add some flax seed, and cut back the sugar to make it healthier. Delicious!

Coconut Pancake Syrup

I live in Hawaii and have been trying for a year to find the right recipe for this stuff. Found it!!! You can buy coconut syrup in the yellow bottles here for a small fortune (plus they have preservatives). Once you have coconut syrup in a local Hawaiian pancake house it is addicting. I've experimented on my own and tried some other recipes. This one is right on. I think you can cut the corn starch a little bit. I also added a 1/2 teaspoon of vanilla at the end. Try chopping up some fresh pineapple bits and adding them to the top (gooey) side of pancakes while they're cooking. When you flip them the pineapple bits grill a little bit-yum! Then top it with this syrup and you have Hawaiian heaven. Much mahalo for the recipe.
